Fried Cardoons

Only a culture that loves food could have come up with multiple techniques for cooking the cardoon
- 2 1/4 pounds cardoons (1 large bunch)
- 6 About 6 cups vegetable oil
- 1/2 cup all-purpose flour
- 2 large eggs, lightly beaten
- 2 tablespoons water
- 1/2 cup grated Parmigiano-Reggiano
Jim's Mediterranean Salad with a Citrus Dressing

Use your “Nicer Dicer” to chop the English cucumbers, mangos, and red onions
- Add any or all of the following (chopped with the Nicer Dicer) to the cucumbers, mangos, and onions:
- English cucumbers
- mangos
- red onions
- jicama
- daikon
- chayote squash
- apples (red and green - core but do not peel)
- pears
- Dressing
- 1/2 cup orange juice
- 1 T mustard (Creole, if available)
- 1 T oil
- 2 T sugar
- 2 T white wine vinegar
- 1 T parsley
- 1 T basil
- hot sauce - to taste
Smoked Meatloaf

Purchase ground meat Mix all ingredients together and form into loaf (see pan trick above) Be sure to use
- 2 lbs. ground beef
- 1 small onion finely chopped
- 1/2 green pepper finely chopped
- 2 cloves garlic minced (optional)
- 1 C. fresh bread crumbs or saltine cracker crumbs
- 2 eggs lightly beaten
- 3/4 C. Jeff's sauce (purchase the recipe)-or other bbq sauce
- 1/4 C. milk
Banana Split Cake

Method: Prepare crust with 1 stick butter and graham cracker crumbs; press into 9x13-inch pan
- 4 bananas
- 2 sticks butter
- 2 cups graham cracker crumbs
- 2 eggs
- 2 cups confectioner’s sugar
- 1 large can crushed pineapple, well drained
- 1 (9-oz) container whipped topping
- 1 cup nuts, chopped
- 1/4 t vanilla
- 1 small bottle red cherries
Jim's Chicken Chimichangas

Method: Bring large pot of salted water to a boil
- 1 (3-4 lb.) chicken or 1 cooked bbq chicken
- 1 can refried beans
- 3 onions, finely chopped
- 2 cloves garlic, finely chopped
- 2 t ground cumin
- 2 T Montreal steak spice (optional)
- 1 small jar enchilada sauce (optional)
- 1 lb. grated old cheddar cheese
- 1 lb. grated Monterey Jack cheese
- 1/4 cup (or less) chopped cilantro
- large flour tortillas
Pressure Cooker Pork Chops & Scalloped Potatoes

DIRECTIONS: Add salt and pepper to meat, then brown in pressure cooker using oil

Woodford Pudding

Woodford pudding is a Kentucky dish that's closely related to an old English jam pudding
- i 2 cup softened butter or margarine
- 1 cup sugar
- 3 eggs, separated
- i 12 cups blackberry jam
- 1 cup all-purpose flour
- 2 teaspoons baking powder l teaspoon cinnamon
- 12 teaspoon nutmeg 1/4 teaspoon cloves 1 cup milk
- SAUCE FOR WOODFORD PUDDING
- 14 cup softened butter
- 1/2 cup sugar
- 1 egg, well-beaten
- 1/4 cup brandy or whiskey or to taste

Honey Rice Pudding

In cooker, combine rice, olive oil and water
- 1 cup long-grain rice
- 1/2 teaspoon olive oil
- 2 1/4 cups water
- 1/3 cup honey
- 1/2 cup sugar
- 3/4 cup evaporated milk (fat-free can be used)
- /4 cup 1% or skim milk
- 3 egg yolks
- 1/3 cup raisins (optional)
- 1 teaspoon vanilla extract
- cinnamon, to taste
Garlic Cheese Rolls

Directions: 1 Place first 7 ingredients in bread pan and select dough cycle
- 1 cup water 3 cups bread flour 1 1/2 teaspoons salt 1 1/2 tablespoons butter 3 tablespoons sugar 2 tablespoons nonfat dry milk powder 2 teaspoons yeast 1/4 cup butter, melted 1 garlic clove, crushed 2 tablespoons parmesan cheese, more, if needed
Lime and Coconut Bread

- 1/2 cup coconut milk -- unsweetened
- 1 cup water
- 1 1/2 teaspoons salt
- 2 cups bread flour
- 1 1/4 cups whole-wheat flour
- 1/4 cup rolled oats
- 1/4 cup cornmeal
- 3 tablespoons sugar
- 3 tablespoons lime zest -- grated
