Bacon and Squash Risotto

Yields: Preparation Preheat oven to 400ºF
- Share:
- 1 medium-large butternut squash, peeled and cut into 1-inch dice
- EVOO – Extra Virgin Olive Oil, for drizzling plus 2 tablespoons
- Salt and pepper
- Freshly grated nutmeg
- Honey, for drizzling
- 1 quart chicken stock
- 1 generous pinch saffron threads
- 1/4 pound slab bacon or pancetta, diced
- 1 small yellow onion, finely chopped
- 2 to 3 cloves garlic, very finely chopped
- 1 1/2 cups carnaroli or Arborio rice
- 1/2 cup dry white wine
- 3 tablespoons butter
- 1/2 to 3/4 cup grated Parmigiano-Reggiano, a couple of handfuls
Chunky Chocolate Pecan Cookies

Preheat to 375. In a large bowl, combine mix, butter, eggs and vanilla
- 1 pkg white cake mix
- 1/2 c butter, melted
- 2 eggs
- 1 tsp vanilla
- 1 1/2 c semi-sweet chocolate chunks or chips
- 1 1/4 c coarsely chopped pecans

Evergreen's General Tso's Chicken

I know there are a ton of Tso's Chicken (pronounced by the cook as "sho")
- 1 1/2 lbs boneless chicken, in bite-sized pieces
- 3 tablespoons good quality soy sauce
- 1/2 teaspoon pepper
- 1 egg
- 1/2 cup cornstarch
- oil, for frying
- 1/4 cup cornstarch
- 3 tablespoons water
- 1/8 teaspoon garlic powder
- 1/4 teaspoon ginger
- 1/2 cup chicken stock
- 1/2 cup sugar
- 1/4 cup good-quality soy sauce
- 3 tablespoons white vinegar
- 4 red chilies (I get these at the Mexican market, much cheaper! You can use more or less, depending on how hot you)
