CARROT APPLE BREAD

I would have to double the recipe, I don't think I have ever made a single loaf of anything
- 1 large egg
- 1/2 cup light brown sugar, packed
- 1/3 cup liquid-state coconut oil (canola or vegetable may be substituted)
- 1/4 cup granulated sugar
- 1/4 cup cup sour cream (lite is okay; or Greek yogurt may be substituted)
- 2 teaspoons vanilla extract
- 2 teaspoons cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch salt, optional and to taste
- 3/4 cup grated carrots (about 1 large peeled and trimmed carrot)
- 3/4 cup grated apples (I used 1 medium unpeeled Fuji; try Gala, Honeycrisp or similar)
Chicken with Mustard Cream Sauce

I make this all the time and it is a favorite
- 4 boneless skinless chicken breast halves
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/2 cup chicken broth
- 1 tbsp corn starch (in a cup or small bowl combine with broth)
- 1/2 cup heavy cream (can use half and half)
- 1/2 can of cream of chicken soup
- 2 tbsp butter
- 2 tablespoons Dijon mustard
- 1/2 teaspoon dried tarragon or 1/4 teaspoon oregano
Zucchini Lasagna Rolls

- 1 Italian turkey sausage, mild (you could use small diced shrimp, no tail, even shredded chicken.)
- Produce
- 1 tbsp Basil, fresh chopped finely
- 2 tbsp Flat leaf parsley, fresh chopped finely
- 1/4 tsp Garlic powder
- 2 Zucchini, large
- Condiments
- 1 cup Marinara sauce, store bought or homemade
- Baking & Spices
- 1 Black pepper
- 1/2 tsp Kosher salt
- 1/8 tsp Red pepper flakes
- Dairy
- 4 oz Cottage cheese, low fat
- 1/2 cup Mozzarella cheese, part skim
- 3 tbsp Parmesan cheese
- 8 oz Ricotta cheese, part skim
- Topping
- Another 1/2 cup of mozzarella cheese
- Another 3 tbsp Parmesan cheese

- 1 pound white american cheese, cut into 1/2 inch cubes (found in deli)
- 1/2 lbs Monterrey Jack cheese, cut into 1/2 inch cubes

- 1 (4 ounce) can diced green chilies
- 1/2 Tablespoon jalapenos, minced fine (optional)
- 3-4 Tablespoons milk
- 2 Tablespoons cilantro, chopped fine (optional)

Chocolate Covered Cherry Amaretto Fudge

Line a 9x9" pan, bottom and sides, with foil
- 2 1/2 c. granulated sugar
- 1 c. unsalted butter
- 1/2 c. whole milk
- 1/2 tsp. vanilla extract
- 13 large marshmallows, torn in half
- 1 (9 oz.) package Nestle Toll House cherry flavored DelightFulls baking morsels
- 1 c. confectioners sugar
- 1/4 c. + 2 T. amaretto
- heaping 1/3 c. well-drained maraschino cherries, cut in half {I pat them dry with a paper towel}
Balsamic BBQ Sauce

- 10-12 slices of soft loaf bread
- 1 8 oz pkg of cream cheese, room temperature
- 1 egg yolk
- 3 tablespoons sugar
- 1/2 teaspoon vanilla

Goulash Soup (Louise's Version of Bavarian/Hungarian)

- 1 1/2 lbs Beef
- 2 Bay leafs
- 2 medium potatoes (diced)(optional)
- 2 Carrots (diced) (optional)
- 2 cloves Garlic (crushed)

- 1 1/2 lbs Yellow onions (two large onions, diced)
- 5 cups Beef broth
- 3 cups V8 Juice
- 1/2 tsp Black pepper, freshly ground
- 1/4 cup Imported Hungarian paprika, good quality sweet
- 2 tsp chili powder (no more, it is not chili)
- 1 tsp Salt
- 3 tbsp Pork lard or butter
