- 2 large acorn squash
- 2 Gala apples, or other hard baking apple
- 1 teaspoon lemon juice
- 1/4 cup brown sugar
- 1 tablespoon cinnamon
- 1 teaspoon freshly ground nutmeg
- 2 tablespoons all-purpose four
- 1 cup applesauce (sweetened or unsweetened is fine)
- 1/2 teaspoon salt
- 4 tablespoons butter
Crazy Cake - Chocolate

- 1 Cup sugar (All purpose sugar - Granulated Pure Cane Sugar)
- 1 tsp. baking soda

- 1 tsp. white vinegar
- 1 tsp. pure vanilla extract
- 5 Tbsp. vegetable oil
- 1 Cup water
Kahlua Chocolate Cake with Pistachio Frosting

I made this 25 years ago, lost my cookbook and have been searching for this recipe every since
- 1 box German chocolate or dark chocolate cake mix (with pudding in the mix) if available
- 3 eggs
- 1/2 cup Kahlua liquor (can substitute coffee but that would be a different cake) Please remember the alcohol cooks out of the Kahlua, only the flavor remains.
- 1/4 cup vegetable oil
- 1 16oz. tub of sour cream (light or fat-free sour cream is fine)
- 1 12 oz. package semi-sweet chocolate chips
- FROSTING
- 1 (3 3/4 oz.) package pistachio-flavored instant pudding mix
- 1/2 cup milk
- 1 (8 oz.) container frozen whipped topping, thawed
Chicken Dijon

Makes 4 servings; however you could add two more chicken breast to this recipe and there would be enough sauce
- Here is another recipe version:
- 4 chicken breast, pounded to be close to even size
- 2 tbsp butter
- 3 tbsp flour
- 2 cups half and half
- 1 cup milk
- 1 can of cream of chicken soup
- 1 tsp thyme
- 2 tbsp Dijon mustard
- salt and pepper (do chicken before frying and of course as to the sauce to taste)

Layered Mexican Casserole with Chicken, Green Chiles, Pinto Beans, and Cheese

I would make this as a dip
- 1 can (15 oz.) Mild Green Chile Enchilada Sauce (If you need gluten-free be sure to choose a brand of green chile sauce that doesn't contain wheat. One is La Victoria.)
- 2 cans refried beans
- 1 large onion, diced in 1/2 inch pieces
- 1 large green bell pepper, diced in 1/2 inch pieces
- 2 tsp. olive oil
- 1 T ground cumin
- 1 can (4 oz) diced green chiles plus juice (not jalapenos unless you want it really hot)
- 1-3 T Tabasco Sauce (Optional, but nice if you want it a bit hotter; we used two tablespoons.) You could use Texas Pete instead. Do not make too hot!
- 3/4 cup sour cream
- 4 cups diced, cooked chicken
- 1/2 cup thinly sliced green onion
- 2 cups grated Monterrey Jack (Stir one cup of the cheese into the refried beans) (If using regular pinto beans omit cheese)
- 1 cup grated mild Cheddar Cheese
- Can serve with plain tostatos for dipping and scooping.
Chicken "Cluck" Queso

- 1 can chicken meat (Or one chicken breast, boiled and shredded finely)
- 1 jar Cheese Whiz
- 1 Tbsp chili powder (If you double this recipe use 1 Tbsp and 1 tsp more)
- 1 cup Monterrey Jack Cheese, grated
- 1 small can chopped green chilies
- 2 tbsps Old El Paso Taco Sauce
- Salt Free or low salt Tortilla chips
Dishaies Marinated London Broil

6 Servings This is my best friend's recipe that I learned from her more than 20 years ago
- 1/4 cup soy sauce
- 1 6 oz can pineapple juice
- 1 tbsp oil
- 1 tbsp brown sugar
- 1 Tbsp corn syrup
- 1 tbsp Sesame Seed
- 2 green onions sliced thinly, mostly the white part
- 1 tsp Onion Powder
- 1/4 tsp Black Pepper, Ground
- 1/4 tsp Garlic Powder
- 1/4 tsp Ginger, Ground
- 1 1/2 pounds London Broil
Cracker Barrel Chicken n' Dumplins

In a bowl, combine the flour, baking powder and salt
- 2 cups Flour
- 1/2 teaspoons Baking Powder
- 1 pinch Salt
- 2 Tablespoons Butter
- 1 cup butter milk, A Bit Less Than A Full Cup (you can use regular milk if needed)

VANILLA MAGIC CUSTARD CAKE

I don't know about you but I have never made anything but a side dish in an 8 x 8 dish
- 1/2 cup unsalted butter-melted and slightly cooled
- 2 cups milk-lukewarm
- 4 eggs-separated
- 1 1/4 cups (150g) powdered sugar
- 1 Tablespoon water
- 1 cup (115g) flour
- 1 teaspoon vanilla extract
- powdered sugar for dusting
Sweetnell's Basic Meatloaf

A great basic meatloaf. Serve usually with mashed or boiled potatoes
- Topping:
- 2 pounds ground beef
- 1 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1 Medium onion finely* chopped
- 1/2 cup finely* chopped bell pepper
- 2 stalks finely* chopped celery (I just cut lengthwise a couple of times to make the celery pieces smaller before I chop the celery)
- 1 egg, lightly beaten
- 1 cup of canned diced tomatoes, with the juice, or crushed tomatoes
- 1 cup bread crumbs (not Italian)
- For those that don't like veggies or onions or green peppers, otherwise, go for it.*
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon French's mustard
- Gravy Recipe suggestion:
- 3 Tablespoons of McCormick's brown gravy mix.
- 1 1/2 cups of beef broth (and if you wish you can also include a package of onion soup mix)
- 2 tablespoons butter or margarine
- 1 tsp salt
- 1/2 tsp pepper
- 3 level tablespoons of cornstarch, with 5 tablespoons of water combined in a cup and stirred until dissolved to make a slurry.
