Crab and Shrimp Bisque

Melt the butter in a Dutch oven or large saucepan over medium-low heat; add the chopped onion and celery
- 3 tablespoons butter
- 2 tablespoons chopped fine onion
- 2 tablespoons chopped fine celery
- 3 tablespoons all-purpose flour
- 2 1/2 cups milk
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon tomato paste
- 1 cup heavy whipping cream
- 8 ounces backfin or lump crab meat
- 4 to 8 ounces small cooked shrimp or other seafood (if the shrimp are large chop into smaller pieces.
- 2 tablespoon sherry wine*

Chicken, Broccoli, and Potato Casserole

Grease a 9 x 13 baking pan with cooking spray
- 1 lb boneless chicken breasts, diced
- 1 cup mayonnaise (or Greek yogurt)
- 6 small Gold Yukon potatoes, quartered
- 1 lb broccoli florets, diced
- 1 cup Parmesan cheese, shredded
- 1/2 cup Cheddar cheese, shredded
- 1/2 tsp black pepper
- 4 garlic cloves, minced
General Tso's Chicken or Shrimp

Servings: 4 Suggest using far less hot peppers unless you like it really hot
- For the chicken (Or shrimp):
- 2 quarts vegetable oil for frying
- 1 cup rice wine
- 1/4 cup soy sauce
- 1 pound boneless, skinless chicken thighs (cubed(or shrimp)
- 1 cup flour
- 1 tablespoon salt
- For the general tso’s sauce:
- 1 tablespoon vegetable oil
- 2 cloves fresh garlic, minced
- 1 teaspoon fresh grated ginger
- 1/2 cup dried chili pods (caution, very hot, I use one pepper or one half a teaspoon)
- 1/4 cup rice wine
- 1/4 cup soy sauce
- 1/4 cup rice wine vinegar (may substitute white wine vinegar)
- 1/4 cup sugar
- 1 tablespoon cornstarch slurry (equal parts cornstarch and water, mixed)
- For the garnish:
- 1/4 cup green onions, chopped
- White rice
GERALDINE’S SHRIMP MOLD WITH ASSORTED CRACKERS

Excellent recipe. Can also use canned lump crab meat (two small cans) or a pound of crab meat, picked through
- 01 . one 10 3/4 oz. can of Campbell’s condensed tomato soup
- 02 . 1/4 c. water
- 03 . one 1 oz. envelope “Knox” unflavored gelatin
- 04 . 1 c. Hellmann’s mayonnaise (the mayo makes a difference (do not use that tangy stuff unless only you want to eat it.)
- 05 . 8 oz. Philadelphia brand cream cheese, softened
- 06 . two 4 oz. cans of cocktail shrimp, drained & mashed (or use 8 oz. fresh small shrimp finely chopped)
- 07 . 3/4 c. celery, finely chopped
- 08 . 3/4 c. onion, finely chopped
- 09 . Dash of salt & freshly ground black pepper
- 10 . 1 tsp. dried parsley flakes
Cheesy Chicken Broccoli Bake

Preheat oven to 350ºF. Chop pepper, broccoli, water chestnuts, onion and chicken
- 1/2 cup peppers, chopped
- 1/2 cup broccoli, chopped
- 1/4 cup water chestnuts, drained and chopped

- 6 oz. cooked chicken breast, chopped
- 1 can cream of chicken soup
- 1 cup shredded Cheddar cheese
- 2 (8 oz.) pkg. refrigerated crescent rolls
Gluten Free Sesame Chicken with Honey (Paleo Option)
