- 4 Cloves garlic, minced
- 1/2 Cup olive oil
- 1 Can chopped tomatoes
- 2/3 Teaspoon each thyme, oregano
- 1/2 Teaspoon liquid smoke
- 2 Bay leafs
- 1 Pinch saffron (optional)
- Cayene pepper to taste
- 2 Cup converted rice
- 4 Cups good chicken stock
- 24 Shrimp, peeled(optional)
- 1/4 Cup Italian parsley, chopped
Yeast Sopaipillas

Yield: 4 dozen medium sopaipillas Total Frying Time: 15-20 minutes Temperature: Medium-High (105°-125°F) Freez
- 1 package active dry yeast
- 1 1/2 teaspoons salt
- 1/4 cup warm water
- 1 teaspoon baking powder
- 1 tablespoon sugar
- 1 1/4 cups scalded milk, cooled
- 1 tablespoon shortening
- 4 cups flour
- Shortening for deep frying
Winter Minestrone

Heat 2 tablespoons of olive oil over medium heat in a large, heavy pot or Dutch oven
- Olive oil
- 4 ounces pancetta, 1/2-inch-diced
- 1 1/2 cups chopped yellow onions
- 2 cups (1/2-inch-diced) carrots (3 carrots)
- 2 cups (1/2-inch-diced) celery (3 stalks)
- 2 1/2 cups (1/2-inch-diced) peeled butternut squash (optional)
- 1 1/2 tablespoons minced garlic (4 cloves)
- 2 teaspoons chopped fresh thyme leaves
- 1 (26-ounce) can diced tomatoes, such as Pomi
- 6 to 8 cups chicken stock, preferably homemade
- 1 bay leaf
- Kosher salt and freshly ground black pepper
- 1 (15-ounce) can cannellini beans, drained and rinsed
- 2 cups cooked small pasta, such as tubetti
- 8 to 10 ounces fresh baby spinach leaves
- 1/2 cup dry white wine
- 2 tablespoons store-bought pesto
- Freshly grated Parmesan cheese, for serving

BLT Dip II

This is a little different version with fresh lettace tomatoes and bacon on top also
- 1-1/2 pound bacon, cooked, drained, crumbled, and divided
- 2 cups shredded mozzarella cheese
- 2 (8-ounce) packages cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 cup cheddar cheese (shredded) or to taste
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder (or to taste)
- 1 tablespoons mustard
- 2 cups chopped seeded tomatoes
- 1-1/2 cup shredded Iceberg lettuce
- pepper an salt to taste
- Toasted bread rounds, crackers, or pita chips.
Tortilla Beef Casserole

- 2 lbs. lean ground beef
- 1 medium onion, diced
- 1 bell pepper, diced
- dash of salt and pepper
- 1 10 3/4 oz. can cream of mushroom
- 1 10 3/4 oz. can cream of chicken
- 1 10 oz. can mild Rotel tomatoes, drained
- 1/4 tsp garlic powder
- 1/2 tsp chili powder
- 2 1/2 cups cheddar cheese, grated
- 10 corn tortillas

- 2 medium potatoes of any variety, peeled and cut into bite-sized pieces
- 1/2 cup diced red bell pepper

- 2 teaspoons dried thyme or 1 tablespoon fresh thyme leaves

Oven-Baked Frito Pie

I am not fond of kidney beans so I use a can of pinto beans, drained
- 1 lb. lean ground beef
- 1 small onion, diced
- 1 can (16 oz) chili beans or pinto beans
- 1 can (8 oz) tomato sauce
- 1 can (15 oz) diced tomatoes or Rotel diced tomatoes
- 1 envelope low taco seasoning
- 1 cup shredded cheddar cheese
- 3 1/2 cups corn chips (Fritos)
- 1 1/4 cup sour cream
Individual No Cook Key Lime Pies

Instructions Crush graham crackers and mix with the butter, set aside
- 3/4 Cup key lime juice, fresh squeezed (about a pound of key limes or good bottled key lime juice)
- 1 can sweetened condensed milk
- 8 oz whipped topping, plus more for garnish

- 1/2 stick butter, unsalted, melted
- 1 sleeve honey graham crackers, turned into crumbs
Lasagna Soup and Italian Sausage

To prepare the soup, heat olive oil in a 6-qt stockpot over medium heat

- 1 lb bulk sweet Italian sausage
- 4 Tbsp olive oil
- 1 onion, medium dice
- 4 cloves garlic, thinly sliced
- 4 Tbsp tomato paste
- 1 (28-oz) can San Marzano whole peeled tomatoes
- 2 cups marinara (or your favorite tomato sauce)
- 2 Tbsp fresh oregano, chopped
- 2 Tbsp fresh thyme
- 1 Tbsp fresh basil, chopped
- 1 bay leaf
- 10 cups beef stock
- Salt and pepper
- 8 strips of lasagna noodles, cooked, cooled, and cut into 2″ squares
- 2 cups ricotta cheese
- 1/4 cup grated Parmesan
- 1 Tbsp fresh basil, chopped
- 1 Tbsp lemon zest
- Salt and pepper to taste
Low Calorie Crunchy Cauliflower

- 1/2 Head of Cauliflower Florets
- 2 Cups Gluten Free Bread Crumbs /Panko Bread crunbs
- 1 tsp Taco Seasoning ( or your favorite blend )

- 1 Tsp Mustard

- 1 Tbs Creamed Horseradish
