"A creamy, yummy chicken salad that is a little different from the usual recipes
- 2 whole skinless, boneless chicken breasts
- salt and pepper to taste
- 1 cup mayonnaise
- 1 cup chopped fresh basil
- 2 cloves crushed garlic
- 3 stalks celery, chopped
- 2/3 cup grated Parmesan cheese

For topping:1. In a large nonstick skillet, melt 1 tablespoon of the butter over medium heat
- 2 tablespoons butter
- 1/4 cup chopped pecans
- 1/4 cup regular rolled oats
- 3 tablespoons packed brown sugar or brown sugar substitute* equivalent to 3 tablespoons brown sugar
- 2 tablespoons sweetened shredded coconut
- 1/8 teaspoon ground cinnamon
- 4 firm, ripe peaches, pitted and sliced
- 1 tablespoon lemon juice
- 1 cup fresh blackberries
- 1 1/2 cups low-fat or light vanilla ice cream or frozen yogurt
