"This is a mildly hot Cajun spice mix you make yourself with common spices from your pantry
- 2 teaspoons salt (Reviewers suggest 1 tsp)
- 2 teaspoons garlic powder
- 2 1/2 teaspoons paprika
- 1 teaspoon ground black pepper
- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper
- 1 1/4 teaspoons dried oregano
- 1 1/4 teaspoons dried thyme
- 1/2 teaspoon red pepper flakes (optional)
Five-Cheese Spinach & Artichoke Dip

Whenever I go to an event, I'm always asked to bring this hot dip
- 1 jar (12 ounces) roasted sweet red peppers
- 1 jar (6-1/2 ounces) marinated quartered artichoke hearts
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- 8 ounces fresh mozzarella cheese, cubed
- 1-1/2 cups (6 ounces) shredded Asiago cheese
- 2 packages (3 ounces each) cream cheese, softened and cubed
- 1 cup (4 ounces) crumbled feta cheese
- 1/3 cup shredded provolone cheese
- 1/3 cup minced fresh basil
- 1/4 cup finely chopped red onion
- 2 tablespoons mayonnaise
- 2 garlic cloves, minced
- Assorted crackers
Simple Tomato Sauce (Giada De Laurentiis)

In a large casserole pot, heat oil over medium high heat
- 1/2 cup extra-virgin olive oil
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- Sea salt and freshly ground black pepper
- 2 (32-ounce) cans crushed tomatoes
- 4 to 6 basil leaves
- 2 dried bay leaves
- 4 tablespoons unsalted butter, optional
Crispy Rosemary Chicken and Fries

- 1/2 cup extra-virgin olive oil, or as needed
- 1 tablespoon chopped fresh rosemary

Crab and Artichoke Dip

I said at least one dip, right? This Crab and Artichoke Dip definitely fits the bill
- 8 ounces cream cheese, at room temperature
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 (14-ounce) can artichoke hearts, drained and quartered
- 12 ounces lump crab meat
- 1 cup shredded fontina cheese, divided
- 1/2 cup shredded pepper jack cheese
- 3 green onions, thinly sliced
- 1 tablespoon Worcestershire sauce
- Kosher salt and freshly ground black pepper, to taste
Chicken Basquaise

Serve this chicken dish with boiled potatoes and a plain vegetable such as broccoli or peas
- 6 chicken breasts, boneless and skinless (1 1/2 to 2 pounds)
- 2 tablespoons olive oil
- 2 medium-size onions, thinly sliced
- 1/2 teaspoon dried thyme
- 1/4 teaspoon dried rosemary
- 1 1/4 pounds peppers, red and green, sliced
- Pinch of cayenne
- 2 medium-size cloves garlic, finely chopped
- 1 pound tomatoes, cored, peeled, seeded and chopped or 1-pound ca whole peeled tomatoes, drained
- 1/4 cup dry white wine, or 1/4 cup liquid from canned tomatoes, drained
- 2 teaspoons capers, optional
- freshly ground pepper, to taste
- salt, to taste
Apple Bourbon Cake

- 4 cups chopped apples, peeled and cored (NY State apples of course)
- 1 cup Bourbon
- 2 cups sugar
- 1/2 cup vegetable oil
- 2 eggs

- Crust:
- 2 1/2 cups chocolate cookie crumbs
- 2 tablespoons sugar
- 4 tablespoons butter, melted
- Cheesecake:
- 1/4 cup heavy cream
- 2 1/2 tablespoons instant espresso powder
- 3 pounds cream cheese
- 1 cup sour cream
- 1 3/4 cups sugar
- 5 eggs
- 1 tablespoon pure vanilla extract
- Pinch of salt
- Glaze:
- 1/3 cup heavy cream
- 2 tablespoons corn syrup
- 1/2 cup chopped milk chocolate
Baked Shrimp Scampi (Ina Garten)

- 2 pounds (12 to 15 per pound) shrimp in the shell
- 3 tablespoons good olive oil
- 2 tablespoons dry white wine
- Kosher salt and freshly ground black pepper
