- 10 medium plum (Roma) tomatoes
- 1 ripe large avocado, pitted, peeled and finely chopped (about 1 cup) 1/2 cup finely chopped cucumber
- 1 medium jalapeño chile, seeded, finely chopped
- 3 to 4 tablespoons chopped fresh cilantro or parsley
- 2 tablespoons lime juice 1/2 teaspoon salt
- Topping
- 1/2 cup sour cream
- 2 teaspoons whipping cream or milk
- 1/2 teaspoon grated lime peel
- 1/2 teaspoon salt

- 1 pound beef stew meat, cut into 1-inch cubes
- 1 pound fresh baby carrots
- 2 medium potatoes, cut into chunks
- 2 medium onions, cut into wedges

- 1 celery rib, cut into 1/2-inch pieces

- 2 cans (4 1/4 oz each) chopped ripe olives, undrained
- 2 cans (4 oz each) chopped green chilies, undrained
- 2 medium tomatoes, seeded and chopped
- 3 green onions, chopped
- 2 garlic cloves, minced
- 1 Tbsp olive oil
- 1/2 tsp pepper
- Dash seasoned salt

- 1 1/2 pounds Italian sausage (bulk or with casings removed)
- 2 onions, finely chopped
- 4 garlic cloves, minced

- 1/2 teaspoon red pepper flakes
- 2 tablespoons tomato paste
- 1 (28-ounce) can diced tomatoes
- 6 cups chicken broth
- 2 bay leaves
- 8 ounces fusilli pasta
- 1/2 cup finely chopped fresh basil
- 8 ounces ricotta
- 1/2 cup grated Parmesan
- 1/4 teaspoon salt
- Pinch of pepper
- 2 cups shredded mozzarella
