Salsa Verde

Mix everything together, adding olive oil slowly
- 2 shallots, chopped
- 2 cloves garlic, chopped
- 1 bunch parsley, chopped
- 2 Tbsp. capers, chopped
- 1/4 tsp. red pepper flakes
- 1 Tbsp. sherry vinegar
- 1/2 cup olive oil
- 1/4 tsp. salt
- 1/4 tsp. pepper
Sugared Pecans

1. Preheat oven to 300 degrees
- 3 egg whites
- 2 tablespoons water
- 8 cups pecan halves
- 1-1/2 cups sugar
- 1 Tbsp orange zest
- 1-1/4 tsp salt
- 1 tsp pumpkin pie spice
Duck Breast With Apples

Combine the allspice, pepper, and salt; rub into the duck breasts
- 1 teaspoon ground allspice
- 1 teaspoon freshly-ground black pepper
- 1/4 teaspoon salt
- 4 skinless duck breasts - (5 oz ea) all fat removed
- Refrigerated butter-flavored cooking spray as needed
- 1 medium onion - (5 oz) minced
- 2 large garlic cloves minced
- 3 fresh sage leaves minced (or 1/4 tspn rubbed dried sage)
- 1 teaspoon minced fresh rosemary (or 1/4 tspn crushed dried rosemary)
- 1/2 ounce low-fat low-sodium ham chopped
- 1/2 cup dry white wine
- 1/2 cup fat-free no-salt-added canned chicken
- broth
- 2 medium Granny Smith apples - (10 oz total) cored, sliced (or Fiji apples)
- 1 tablespoon red wine vinegar
- Extra fresh sage leaves for garnish (optional)
Freezing Corn on the Cob

When the corn comes in, it is so good that you get sick of eating it
- Sort corn into similar sizes:
- Fill a large pot 2/3 full with water. Bring to a boil.
- Fill another large pot, or bowl, with ice water.
- Husk corn; remove the silk with a gentle brush; remove all bad spots.
- Small – 1 1/4 inch diameter
- Medium – 1 1/4 to 1 1/2 inch diameter
- Large – over 1 1/2 inch diameter
- Blanche corn in boiling water according to sizes. Start timing as soon as the corn enters the water.
- Time:
- Small – 7 minutes
- Medium – 9 minutes
- Large – 11 minutes
Barbeque Sauce

Mix all the spices together
- Spices:
- 6 Tbsp. brown sugar
- 5 Tbsp. white sugar
- 1 1/2 tsp. paprika
- 1 1/2 tsp. ground mustard
- 1 1/2 tsp. black pepper
- 1 1/2 tsp. onion powder
- Sauce:
- 2 cups ketchup
- 1 cup water
- 1/2 cup apple cider vinegar
- juice of 1/2 lemon
- 1/2 tsp. corn syrup
- Worcestershire sauce
Flo's Fudge

Mix milk, sugar and salt in a saucepan and bring to a boil over medium heat
- 2/3 cup evaporated milk
- 1 2/3 cups sugar
- 1/2 tsp. salt
- 1 1/2 cup small marshmallows
- 1 1/2 cups semi-sweet chocolate chips
- 1 tsp. vanilla
- 1 cup chopped nuts, optional
Guacamole

In a medium bowl, mash the avocado and stir in salt
- 2 avocados, peeled, pitted and diced
- 2 tsp. salt
- 1 large tomato, diced
- 1/2 tsp. garlic, minced
- 1 onion, diced
- 1 Serrano peppers, seeded and diced
- 1/2 Tbsp. chopped fresh cilantro
- 2 Tbsp. fresh lime juice
Stuffed Mushrooms

- 20 large mushrooms
- 2 Tbsp butter
- 1 medium onion, finely chopped
- 1/4 cup green pepper, finely chopped
- 1 clove garlic, minced
- 1/2 Ritz crackers, finely crushed
- 3 Tbsp Parmesan cheese
- 1 Tbsp parsley, snipped
- 1/2 tsp seasoning salt
- 1/2 tsp dried oregano
- Fresh ground pepper
- 1/3 cup chicken broth
Cumin Spiced Lentil & Cauliflower Soup

- 2 Tbsp. olive oil
- 2/3 cup finely diced onion
- 1/2 cup finely diced celery
- 1/2 cup finely diced carrots
- 4 garlic cloves, minced
- 2 tsp. ground cumin
- 1 tsp. turmeric
- 2 carton chicken broth
- 1 cup lentils, rinsed and drained
- 1 head cauliflower, chopped into small pieces
- 4 lemon wedges
- 1/2 cup plain yogurt
- 1/2 cup finely chopped green onion

Yuletide Pie

Wonderful light minty dessert for a Christmas or Thanksgiving meal
- CRUST:
- 1 1/4 cups of chocolate wafer crumbs, crushed
- 3 Tbsp. melted margarine
- FILLING:
- 24 large marshmallows
- 1/2 cup milk
- 1 1/2 ounces white Creme de Cacao
- 1 1/2 ounces Creme de Menthe
- 7 drops green food colouring
- 1 pint whipping cream
