Preheat oven to 375 degrees Heat 1 tablespoon of oil in medium skillet over medium heat
- 1 Tablespoon vegetable oil
- 1 small onion, chopped
- 3 green onions, chopped
- 10 ounces frozen chopped spinach. thawed and squeezed dry
- 4 to 6 ounces domestic feta cheese, crumbled
- 1 cup cottage cheese
- 1 egg
- Salt and pepper to taste
- 1 pound phyllo, thawed
- 8 tablespoons butter (1 stick), melted

1. Thinly slice tomatoes. Place on paper towel to drain for about 30 minutes
- 3 medium size tomatoes, all red or mix of red and yellow about 1 lb total.
- 1 refrigerated ready to use pie crust

- 2 cartons of chicken stock
- 1 carton of water
- 1 star anise
- 3 Tbsp. fish sauce
- 1 Tbsp. sesame oil
- 6 cloves garlic, peeled and smashed
- 2 inch piece of ginger, peeled and thinly sliced
- 1 lb. of ground pork
- 1 lb. of raw shrimp, ground
- salt, to taste
- Ground white pepper, to taste

- 1 - 2 Tbsp. finely chopped ginger
- 4 Tbsp. dried black mushrooms, hydrated and chopped

- 3 cups chicken stock
- 5 kaffir lime leaves
- 4 stalks lemongrass, white part only, sliced
- 8 slices fresh ginger, peeled
- 1 lb. boneless, skinless chicken breasts, cut into thin strips
- 2 green onions, thinly sliced
- 2 Tbsp. fish sauce (to taste)
- 1/4 cup lime juice

- 1 small red chili, seeded and thinly sliced
