Spinach and Cheese Dip

Mix everything, except grated cheese, together in a medium saucepan over medium heat until bubbly
- 1 pkg. frozen spinach, thawed and squeezed
- 8 ounce pkg. cream cheese, softened
- 1 cup salsa
- 1 tsp. cumin
- 2 green onions, thinly sliced
- 1 clove garlic, minced
- 1 cup milk
- 1/2 cup grated cheese
- 3 jalapeno peppers, minced
- Louisiana hot sauce to taste
- S&P
German Beer Spread

Bring cheeses to room temperature; place in a food processor bowl fitted with metal blade
- 2 cups (8 ounces) Wisconsin Sharp Cheddar Cheese, shredded
- 2 cups (8 ounces) Wisconsin Swiss Cheese, shredded
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon dry mustard
- 1 clove garlic, minced
- 1/2 cup dark German or other beer
- Assorted rye or pumpernickel crackers, breadsticks, or rye bread rounds
Jamie Oliver's Tuna

- 2 tuna steaks
- 1 bunch of cilantro
- 1 bunch of flat leaf parsley
- 2 lemons( make them 3 if they are smaller, cut into half and de-seeded)
- 3 to 4 dried chili peppers
- 2 to 3 cloves of garlic, peeled and cut in half
- 2 Tablespoons of olive oil
- Salt and milled pepper

- SOUP:
- Large beef bone or beef shanks
- 1 clove garlic, peeled and sliced
- 1 onion, quartered
- 4 carrots, peeled and quartered
- 4 parsnips, peeled and quartered
- 4 stalks celery, quartered
- 1 Tbsp. peppercorns
- Pinch of caraway seeds
- 1 carton beef broth
- water
- 4 potatoes, peeled, quartered
- 1/2 pkg. egg noodles
- SAUCE:
- 1 tsp. finely chopped garlic
- 2 Tbsp. vegetable oil
- 1 cup milk
- 2 Tbsp. flour
Hungarian Borscht

Best borscht ever!! I look forward to the beet harvest so I can make this and eat it for lunch
- 10 lbs. RED beets
- 6 beef marrow bones
- 1 lb. stewing beef
- 2 Tbsp. vegetable oil
- 6 cloves garlic, peeled and sliced
- 2 tsp. pepper
- 2 tsp. dried parsley
- 1 can diced tomatoes with juice
- 1 lb. carrots, peeled and sliced
- 2 tsp. sugar
- 3/4 large cabbage, shredded
- 7 medium potatoes, peeled and cut into 1/2-inch cubes
- 2 cartons beef broth
- Parmesan cheese, to serve
- Sour cream, to serve

- grated montasio (or asiago) cheese
- 1 tbsp. flour

- 1 lb. perch fillets
- 1/3 cup flour
- 2 tsp. paprika
- S&P to taste

- Balls:
- 1 lb. ground beef
- 1 egg
- 1/4 cup dry bread crumbs
- 1 onion, diced
- 1 tsp. minced garlic
- 1/2 tsp minced ginger
- freshly ground pepper
- Sauce:
- 1/4 cup ketchup
- 1 cup packed brown sugar
- 3 Tbsp. cornstarch
- 1 1/2 cups water/broth
- 1/4 cup white vinegar
- 3 Tbsp. soy sauce
Vegetable Kottu

Either make or buy flat breads i
- 3 Paratha’s shredded into thin strips
- 4 tbsp vegetable oil
- 1 tbsp curry powder
- 1 tsp chili powder
- 2 tbsp tomato puree
- 2 tsp dark soy sauce
- Salt to taste
- 1 carrot julienned i.e. cut into thin long strips
- Handful of scallions cut into inch long pieces
- Coarsely grind below ingredients using food processor or chopper
- 2 medium size onions
- 4 garlic cloves
- 2-3 green chilies
- 1 large tomato
- Few curry leaves
