- 1 cup peanut butter
- 1 cup margarine
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 tsp. vanilla
- 2 1/2 cups flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
Nicki's Shepherd's Pie

I usually double or triple this and freeze a couple
- 1 lb. lean ground beef
- 1 small onion, finely chopped
- 2 stalks celery, finely chopped
- 1/2 tsp. minced garlic
- 1/2 tsp. salt
- Freshly ground pepper, to taste
- 2 Tbsp. Worcestershire Sauce
- 2 cups corn, preferably fresh off the cob
- 3 cups mashed potatoes
- 1/4 cup milk
- 1/2 stick butter, coarsely chopped
Potato Gratin

Very rich. Can be made ahead of time and reheated
- 1/2 cup milk
- 1 cup whipping cream
- 4 cloves garlic, sliced
- 1 Tbsp. fresh thyme, or 1 tsp. dried thyme
- 1 1/2 tsp. rosemary, chopped
- 2 lbs. Yukon Gold potatoes, peeled and thinly sliced

- 3 Tbsp. butter
- 1/2 cup grated Parmesan
Spicy Cabbage Kimchi

Directions: 1. Cut the cabbages in half lengthwise and trim the ends
- Ingredients:
- 2 heads Napa cabbage
- 1 1/4 cups sea salt
- 1 tablespoon fish sauce
- 5 green onions, chopped
- 1/2 small white onion, minced
- 2 cloves garlic, pressed
- 2 tablespoons white sugar
- 1 teaspoon ground ginger
- 5 tablespoons Korean chile powder

- 1 medium spaghetti squash
- 1 tablespoon extra virgin olive oil
- 1 pound fresh Italian chicken sausage
- 1/2 cup bell pepper, diced (green and yellow)
- 1/2 cup onion, diced

Thai-Style Pork Stew

Preparation: To prepare stew, trim fat from pork
- STEW:
- 2 pounds boned pork loin, cut into 4 pieces
- 2 cups (1 x 1/4-inch) julienne-cut red bell pepper
- 1/4 cup Teriyaki sauce
- 2 Tbsp. rice or white wine vinegar
- 1 tsp. crushed red pepper
- 2 garlic cloves, minced
- 1/4 cup creamy peanut butter
- OTHER:
- 6 cups hot cooked basmati rice
- 1/2 cup chopped green onions
- 2 Tbsp. chopped dry-roasted peanuts
- 8 lime wedges
Brown Sugar Shortbread
