Shrimp & Mango Spring Rolls

Cut mango, carrots, cucumbers and avocado, and set them in bowls in an assembly line
- 1 lb. of cooked shrimp
- 1 mango, peeled and sliced into matchsticks
- 1 bunch cilantro
- 1 bunch mint
- 1 seedless cucumbers, peeled and sliced into matchsticks
- 1 avocado, peeled, pitted and sliced
- 2 carrots, cut into matchsticks
- 12 rice paper wrappers
Lobster Quiche

- 2 10-inch pie crusts, baked
- 4 eggs
- 2 cups light cream (10%)
- S&P
- 1/8 tsp. nutmeg
- 2 cups Gruyère or Swiss cheese, grated
- 2 Tbsp. fresh chives, chopped

- 4 Tbsp. Parmesan cheese

- 1 Tbsp. canola oil, plus more for frying noodles
- 2 BS chicken breasts, sliced on the diagonal into 1/4″ pieces
- 2 Tbsp. yellow curry paste
- 3 cups chicken broth
- 1 can coconut milk
- 1 1/2 tsp. sugar
- 1/4 cup fish sauce
- 12 ounces fresh egg noodles, divided
- hot & sweet pickled peppers
- 1 lime, quartered
- 4 Tbsp. fried onions
- 1 jalapeno pepper, seeds removed, minced
- 4 sprigs fresh basil, thinly sliced
- 1/2 cup slivered red onion
Heart of Palm Prosciutto Wraps

This appetizer is so good that I double it up to keep some just for me
- 4 slices prosciutto ham, (very thinly sliced)
- 1/2 to 2/3 cup herb cream cheese
- 3 Tbsp. chopped fresh dill
- 4 whole stems of heart of palm, rinsed and drained

- 4 filets of white fish (haddock, cod, tilapia)
- 1 1/2 Tbsp. Dijon mustard
- 4 sticks of havarti
- 1 Tbsp. chopped chives
- Freshly ground pepper
- 1 Tbsp butter
- 1 Tbsp olive oil
- 1 Tbsp. flour
- 1 1/2 cups chicken broth
- 3/4 cup white wine
- 1 1/2 Tbsp lemon zest
Hopi Stew

This is based on a recipe using ground beef, however, I use ground venison and it tastes terrific
- 3 pounds ground venison
- 2 large onions, diced
- 2 Tbsp. chili powder
- 6 potatoes, diced
- 1 pound carrots, diced
- 3 cans summer fresh corn
- 1 28 oz. can diced tomatoes with liquid
- 3 (4 ounce) cans chopped green chiles, with juice
- 3 cups beef broth
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
Banana Bread

Preheat oven to 375* Grease and flour a loaf pan
- 1/2 cup shortening
- 1 cup sugar
- 2 eggs
- 1 cup mashed banana (2 1/2 bananas)
- 1 tsp. lemon juice
- 2 cups flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 cup nuts, optional
