- 1 cup uncooked regular long-grain white rice
- 2 cups water
- 1 teaspoon olive oil
- 1 egg, beaten
- 1 lb extra-lean (at least 90%) ground beef
- 1 cup sliced fresh mushrooms
- 1/2 cup sliced celery
- 1/3 cup reduced-sodium soy sauce
- 2 teaspoons sesame oil
- 1/2 teaspoon red pepper sauce
- 1 1/2 cups fresh snow pea pods, cut diagonally in half
- 8 medium green onions, chopped (1/2 cup)
Lemony Quinoa Salad

Quinoa is a high-protein, good for you grain; it can be substituted for couscous and makes a lovely side dish
- 1/4 cup pinenuts
- 1 cup quinoa (cook using package directions)
- sea salt to taste
- 1/4 cup fresh lemon juice
- 2 stalks celery, chopped
- 1/4 red onion, chopped
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- 1 bunch fresh parsley, chopped
Bacon & Rosemary Chicken

Flatten chicken breasts to an even thickness; sprinkle with salt and pepper
- 4 boneless skinless chicken breast halves (5 ounces each)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup all-purpose flour
- 5 bacon strips, chopped
- 1 tablespoon butter
- 4 garlic cloves, thinly sliced
- 1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
- 1/8 teaspoon crushed red pepper flakes
- 1 cup reduced-sodium chicken broth
- 2 tablespoons lemon juice

- 1/4 cup butter, cubed
- 1/2 pound sliced fresh mushrooms
- 1/4 cup finely chopped onion
- 1/4 cup all-purpose flour
- 2 cups 2% milk
- 2 teaspoons chicken bouillon granules
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon pepper
- 1/2 cup sour cream
- 3 tablespoons sherry or chicken broth
- 2 cups finely chopped cooked chicken
- 2 tablespoons minced fresh parsley, divided
- 15 prepared crepes (9 inches)

In 10" skillet over med-high heat, in hot margarine, cook half of chicken until browned
- 2 T margarine/butter
- 1 lb skinless, boneless chicken breasts, cut into thin strips

- 1 c milk

- 2 pounds thick sliced bacon
- 2 (8-ounce) bars semi-sweet baking chocolate
- 2 tablespoons butter, melted

Benihana Copycat Chicken Fried Rice

Scramble egg whites and chop after cooking
- 1/2 teaspoon onion, chopped
- 1/3 teaspoon carrots, chopped
- 1/3 teaspoon green onions
- 4 ounces brown rice, steamed
- 3 pinchs salt
- 7 teaspoons butter substitute
- 2 egg whites
- 1/2 teaspoon light oil
- 1 ounce lean chicken, cooked
- 1/4 teaspoon sesame seeds
- 3 pinchs pepper
- 1 teaspoon low sodium soy sauce
Hooters Buffalo Chicken Wings

Directions Heat oil in a deep fryer to 375*
- On the side:
- vegetable oil for frying
- 1/4 C. butter
- 1/4 C. frank's red hot cayenne sauce or other you prefer
- dash ground pepper
- dash garlic powder
- 1/2 C. all-purpose flour
- 1/4 tsp. Paprika
- 1/4 tsp. Cayenne pepper
- 1/4 tsp. Salt
- 10 chicken wing pieces
- bleu cheese dressing
- celery sticks
