- 1/2 c crunchy peanut butter
- 1/2 c brown sugar
- 1/2 c corn syrup
- 1 c rice krispies cereal
- 1 c oatmeal
- 1/2 c raisins

Crumb Top Fruit Muffins

Preheat oven to 350 degrees
- 1/2 C butter
- 1 1/2 C sugar
- 1 egg
- 1 t vanilla
- 1 C milk
- 1 t lemon juice
- 2 C flour
- 1 t soda
- 2 C fruit diced (strawberries, blueberries, rhubarb, pineapple (fresh or drained canned, etc.)
- Crumb Topping
- 1/4 C butter
- 1 C flour
- 1/2 C sugar
- 1/2 t cinnamon
Pineapple Cherry Dump Cake

Dump undrained pineapple into a 9x13 baking dish and spread evenly
- 1 (15 ounce) can crushed pineapple in heavy syrup
- 1 (21 ounce) can cherry pie filling
- 1 (18.25 ounce) box pineapple or yellow cake mix
- 1 stick butter
- walnuts or pecans (optional)
Peanut Mazapanes

Using a food processor, grind the peanuts until coarse
- 2 cups roasted unsalted peanuts
- 1 cup powdered sugar
- 1 teaspoon smooth peanut butter

- 1 1/2 cups powdered sugar

- 1/2 cup whipping cream
- 2 cups semisweet or bittersweet chocolate chips
- 1/4 cup butter or unsalted butter
- 2 tablespoons instant espresso powder
Chipotle Pork Quesadillas

- 2 boneless pork chops (about 3/4 pound)
- Salt and pepper
- 3 tablespoons extra-virgin olive oil
- 1/2 onion, chopped
- 1 cup canned diced tomatoes
- 3 cloves garlic, chopped
- 1 chipotle chile in adobo sauce, finely chopped
- 1/2 teaspoon ground cumin
- 1/2 cup chopped cilantro, plus leaves for garnish
- 8 medium flour tortillas
- 1 cup shredded monterey jack cheese
P.F. Chang's Gluten Free Mongolian Beef

1. Heat oil in a sauté pan
- 12 oz. Sliced Beef Tenderloin
- 1 tbsp. Soy Bean Oil
- 1/2 tsp. Garlic
- 2 fl oz. GLUTEN FREE soy sauce
- 2 tbsp. Sugar
- 1 tsp. Rice Wine
- 2 oz. Green Onion Sticks- 3" long, green part only!
- 1/2 tsp. Sesame Oil

- 1 (12-ounce) can frozen orange juice concentrate, thawed
- 1 (12-ounce) can frozen lemonade concentrate, thawed
- 3 cups pineapple juice
- 2 cups peach nectar
- 1 (1-liter) bottle ginger ale
- 5 cups ice cubes
- Orange, lemon, and pineapple slices for garnish
Frosted Chocolate Orange Muffins

Grate orange & sqeeze juice so juice and milk make 1 c
- Basic Muffin Recipe - no b soda, use 1 1/2 c flour, lt brown sugar, 1/2 c milk
- 2 oranges
- 1/2 c unsweetened cocoa
- 1 c semisweet chocolate chips
- strip of orange zest for decoration
- Frosting
- 2 oz semisweet chocolate
- 2 T butter
- 2 T water
- melt over double boiler
- add 1 1/2 c conf sugar
- while frosting warm spread on muffins
