CILANTRO CHICKEN WITH ZUCCHINI SPANISH RICE

- 1/4 cup PLUS 1 Tbsp. chopped fresh cilantro
- 2 Tbsp. olive oil
- 1 Tbsp. finely chopped garlic
- 1 lb. boneless, skinless chicken breast halves, cut into thin strips
- 1/2 cup fat free sour cream
- 2 medium zucchini and/or yellow squash, chopped (about 4 cups)
- 2 cups water
- 1 package Knorr® Fiesta Sides™ - Spanish Rice
Lemon Butter Chicken Breasts

Place each chicken breast half between two pieces of plastic wrap
- 6 med boneless skinless chicken breast halves (1 1/2 lbs)
- 1/2 c flour
- 1/2 t salt
- 2 t lemon pepper seasoning
- 1/3 c butter
- 2 lemons, sliced
- 2 T lemon juice
- hot cooked rice or pilaf (optional)
Homemade Italian Seasoning Recipe

1. Mix all ingredients in a bowl until well combined
- 2 Tablespoons basil
- 2 Tablespoons marjoram
- 2 Tablespoons oregano
- 2 Tablespoons rosemary

Preheat oven to 350 F. Spray 9 inch square layer cake pan - OR - one doughnut tin with non-stick cooking spray
- Cake:
- 1/2 cup finely minced maraschino cherries
- 2 cups all-purpose flour
- 3/4 cup unsalted butter or shortening, the no trans fat one
- 1 1/2 cups sugar
- 1/4 teaspoon salt
- 2 3/4 teaspoons Rumford Reduced Sodium Baking Powder
- 3/4 cup milk
- 2 eggs
- 1 teaspoon pure vanilla extract
- 1 teaspoon cherry extract
- 1/4 teaspoon pure almond extract
- 1 1/2 teaspoons pure vanilla
- Cherry Fondant Glaze:
- 1 cup confectioners' sugar
- 1 tablespoon unsalted butter, softened
- 1 teaspoon cherry extract
- Milk or cherry syrup/juice, as required
