Cinnamon and Cream Cheese Icebox Cake

- 3 cups chilled heavy cream, divided
- 1/2 cup plus 1 tablespoon granulated sugar, divided
- 1 cup softened cream cheese
- 9 to 12 chocolate graham crackers, broken into squares

- 2-1/2 cups all-purpose flour
- 2/3 cup packed brown sugar
- 3/4 cup cold butter

- 1 can (14 ounces) sweetened condensed milk
- 1-3/4 cups toffee bits, divided

- 1/2 c corn syrup
- 1/2 t vanilla
- 1/2 c sugar

- 1 cup butter, softened
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup quick-cooking oats
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 cup canned pumpkin
- 1-1/2 cups semisweet chocolate chip
