Ingredients

  • 4 T olive oil
  • 1 med onion, fine chop
  • 1/2 c carrot, chop
  • 1/4 c celery, chop
  • 1 sm garlic clove, minced
  • 3 lbs plum tomatoes, peeled, seeded & fine chop
  • 1/2 c chicken broth
  • pinch crush red pepper
  • salt
  • 2 basil leaves, torn

Preparation

Step 1

Pour oil into med saucepan. Add onion, carrot, celery & garlic. Cook over med heat, stirring until veg tender & golden. (15 mins) Stir in tomatoes, broth, red pepper & salt to taste. Bring to simmer. Cover pan partially and cook over low heat about 30 min. Stir occasionally. Stir in basil. Serve hot
