1 In 10-inch skillet, cook beef and taco seasoning mix as directed on seasoning mix package
- 1 lb lean (at least 80%) ground beef
- 1 package taco seasoning mix
- 1 head iceberg lettuce, broken into small pieces
- 2 medium tomatoes, chopped
- 1/2 cup sliced ripe olives
- 4 medium green onions, sliced (1/4 cup)
- 2 cups shredded Cheddar cheese (8 oz)
- 1/2 cup Italian dressing
- 1 bag roasted veggie zesty Cheddar tortilla chips, coarsely crushed
Chicken Pepperoni

Heat a large, ovenproof skillet over medium-high heat with 2 tablespoons of olive oil, 2 turns of the pan
- 3 About 3 tablespoons olive oil, divided
- 4 to 6 boneless, skinless chicken breasts, pounded to 1/2-inch thick
- Salt and pepper
- 1 small onion, finely chopped
- 4 cloves garlic, sliced or chopped
- 2 red chili pepper, such as finger or Fresno, seeded and halved lengthwise then thinly sliced OR substitute 1/2 cup finely chopped sweet red bell pepper for less heat
- 1 sprig fresh oregano, chopped or 1 teaspoon dried oregano, lightly crushed in your palm
- 2 tablespoons tomato paste
- 3 to 4 ounces (about 3 to 4 inches) good quality pepperoni, casing removed and coarsely grated or very thinly sliced into matchsticks (preferred brand Vermont Smoke and Cure Smoked Pepperoni available online and at some Whole Foods)
- 1/2 cup dry red or white wine
- 1 28-ounce can San Marzano tomatoes, crushed by hand
- 1 ball fresh mozzarella cheese, grated or very thinly sliced, for topping
- A few leaves of basil, torn

I made this recipe as called for with one exception, instead of frozen vegetables I used fresh veggies
- 3 large eggs, plus 3 egg whites
- 3/4 cup 2% reduced-fat cottage cheese
- 4 ounces smoked gouda cheese, shredded (about 1 cup)
- 1 teaspoon fresh rosemary, minced
- 3 cloves garlic, thinly sliced
- 2 tablespoons extra-virgin olive oil
- 1 medium onion, chopped
- Kosher salt, to taste
- 1 (16 -ounce) package frozen mixed vegetables (broccoli, cauliflower and carrots), thawed
- 2 tablespoons parmesan cheese, grated
- 1 scant teaspoon paprika
- 4 slices multigrain bread
String Beans with Shallots

Blanch the string beans in a large pot of boiling salted water for 1 1/2 minutes only
- 1 pound French string beans (haricots verts), ends removed
- Kosher salt
- 2 tablespoons unsalted butter
- 1 tablespoon good olive oil
- 3 large shallots,large-diced
- 1/2 teaspoon freshly ground black pepper
Crispy Falafel Chicken

Directions Preheat the oven to 425 degrees F

- Cooking spray
- 3 skinless, boneless chicken breasts (about 1 1/4 pounds), sliced into 1/4-inch-thick strips
- 1 tablespoon extra-virgin olive oil
- 1/2 cup falafel mix
- 2 whole-wheat pitas, halved
- 6 tablespoons hummus
- Grated zest and juice of 1 lemon
- 1/2 teaspoon harissa or other hot chile paste
- 4 cups shredded coleslaw mix
- 6 radishes, halved and thinly sliced
- 1 cup chopped
- Kosher salt
Sauce - BBQ Sauce

brown onion in oil add remaining ingredients simmer 20-30 mins
- 2 tbs oil
- 1 chopped onion
- 2 tbs vinegar
- 2 tbs brown sugar
- 4 tbs lemon juice
- 3 tbs worcestershire sauce
- 1 c catsup
- 1/2 c water
- 1/2 tsp mustard
- 1/2 c chopped celery
- salt
Oatmeal: HG's Blueberry Muffin Oatmeal

In a nonstick pot, combine all ingredients except blueberries
- 1/2 cup old-fashioned oats
- 2 tsp. brown sugar (not packed)
- 1 tsp. sugar-free French vanilla powdered creamer
- 1 no-calorie sweetener packet
- 1/4 tsp. almond extract
- 1/8 tsp. vanilla extract
- Dash cinnamon
- Dash salt
- 1 cup Unsweetened Vanilla Almond Breeze
- 1/2 cup fresh or thawed-from-frozen blueberries (if frozen, drained and blotted dry)
