Shrimp Salad with Spring Pea Mix

A potato salad without mayonnaise
- 12 Lg. Eggs
- 1 Lemon
- 3 Sprigs Fresh dill, leaves chopped, stems reserved
- 12 oz. Lg. Shrimp, shelled & deveined) (16-20 count)
- 12 oz. Yukon Gold potatoes, scrubbed & cut into 1/2-in. chunks
- Salt & Pepper
- 12 Oz. Sugar Snap Peas, strings removed, cut in halves at an angle
- 1 1/2 c. frozen peas
- 1 c. Plain Yogurt
- 1 Tbsp. Dijon mustard
- 1/2 c Finely chopped red onion (from 1 sm. onion)
- 3 stalks celery - finely chopped
- 1 Tbsp. White wine vinegar
- 2 Tbsp. Olive Oil

Using a hand mixer... whip your cream cheese add your eggs and whip with the cream cheese add pumpkin add the spic...
- 1 8 oz pkge of cream cheese
- 5 large eggs
- 2 tsp of liquid stevia (OR if you are not a low carber , 1 cup of sugar)
- 2 cups of 100% pure pumpkin
- 1/4 tsp don't make it heaping ground ginger
- 1/4 tsp don't make it heaping of ground cloves
- 1/4 tsp don't make it heaping of nutmeg
- 1/4 tsp don't make it heaping of all spice
- 1 tsp vanilla
Pepper Jelly-Glazed Carrots

- 1 (32 oz) pkg carrots - halved crosswise
- 1 (10 oz) can condensed chicken broth - undiluted
- 1 (10 oz) jar red pepper jelly (or hot jalapeno pepper jelly)

Preheat oven to 350F/180C
- at least 6 cups cauliflower flowerets, cut fairly small (1 large head cauliflower or 1 1/2 small heads)
- 1/2 tsp. salt (for water to cook cauliflower)
- 2 cups diced lean ham
- 4 oz. reduced-fat cream cheese, softened
- 3/4 cup fat-free Greek yogurt (I used my favorite fat-free Greek yogurt but you can also make this with sour cream if you prefer.)
- 2 T finely-grated Parmesan cheese
- 1/4 cup thinly sliced green onions
- fresh ground black pepper to taste
- 3/4 cup grated cheddar cheese (or more, depending on the size of your dish; use low-fat cheese for South Beach)
