Conch Fritters

Chop or mince conch in blender
- 3 med. Conchs - pounded & ground or chopped fine
- 2 Celery ribs sliced thin or chopped
- 4 cups Water
- 2 Tbsp. Thyme
- 4 Tbsp. Baking Powder
- 2 small Onions finely chopped
- 1 Tbsp. Tomato Paste
- 4 Hot Peppers
- 4 cups Flour
- Lime Juice
Granola - Chunky Date, Coconut & Almond Granola

Preheat oven to 300. Mix first 7 ingredients in a large bowl
- 2 cups old fashioned oats (not instant)
- 3/4 cup whole almonds
- 1/2 cup sweetened flaked coconut
- 1/2 cup raw cashews
- 1/3 cup brown sugar
- 1 1/2 tsp ground allspice
- 1 tsp ground cinnamon
- 4 Tbsp. unsalted butter
- 2 Tbsp honey
- 1 cup pitted dates

Sift flour and walt into bowl and make a well in the enter
- 3 cups plain flour
- 1/2 tsp salt
- 2 eggs - beaten
- 1 cup milk and water combined
- 1 Tbsp sunflower oil
- 2 Tbsp butter - melted plus

New Year's Day Casserole

Preheat oven to 425. Saute ham in batches over medium heat in dutch oven for 5 minutes or until lightly brown
- 4 cups Chopped cooked ham
- 2 Tbsp. Vegetable oil
- 4 Tbsp. All purpose flour
- 3 Low sodium chicken stock
- 1 16 oz Frozen collard greens - chopped
- 1 16 oz Frozen onions, celery, red & green bell pepper
- 1 15 oz Can black eyed peas - rinsed & drained 1/2 tsp. Crushed red pepper flakes
- CORNBREAD CRUST
- 1 1/2 cups White Cornmeal Mix
- 1/2 cup All purpose flour
- 1 tsp. Sugar
- 2 Large eggs - lightly beaten
- 1 1/2 cups Buttermilk

Preheat oven to 350. Beat butter at medium speed with an electric mixer 2 minutes or until creamy
- 1 cup Butter - softened
- 2 cups Sugar
- 2 large Eggs
- 1 cup Sour cream
- 1/2 tsp. Vanilla extract
- 2 cups All-purpose flour
- 1 tsp. Salt
- 1 tsp. Baking powder
- 1/8 tsp. Baking soda
- 24 paper baking cups

- 1 cup frozen tiny green peas, thawed
- 1 teaspoon dried sage

- 1 4 oz jar drained diced pimentos
- 1 tablespoon fresh lemon juice
