- 1 can of cream of mushroom soup (divided into 1/4 & 3/4 cups)
- 1 lb. ground meat
- 1/3 cup dry bread crumbs
- 1 egg, beaten
- 1/4 cup onion, finely chopped
- 1 1/2 cup sliced mushrooms
Asparagus - Roasted with Balsamic Browned Butter

- 40 thick asparagus spears trimmed (about 2 lbs)
- Pan
- 1/4 tsp. kosher salt
- 1/8 tsp black pepper
- 2 Tbsp. Butter
- 2 tsp. lower sodium soy sauce
- 1 tsp. balsamic vinegar

Summer Fruit & Sweet Cream Cheese Galette

Oven rack lowest position - heat oven to 400
- 1 pkg (8 oz) cream cheese - softened
- 1/2 cup confectioners sugar
- 3 Tbsp Cornstarch divided
- 1 egg - separated
- 2 Tbsp. sugar, plus a little extra for sprinkling
- 1 tsp. vanilla extract (or 1/4 tsp. almond extract)
- 1 pie crust
- 2 cups fruit (one or you can mix them - ie peaches and apricots, or berries: blackberries, blueberries and raspberries - or mix all together!
Weight Watchers Beef Tips

- 2 pounds lean chuck – cut in 1 – 3/4 inch pieces
- 1 can 98% fat free cream of mushroom soup
- 1 pkg. onion soup mix
- 1 can Diet Sprite or 7up
- Feel free to bulk this up with any zero point vegetables that you choose!

Preheat oven to 400. Cook beef and garlic in 12" skillet until beef is browned, stirring to break up meat
- 1 lb Ground beef
- 2 cloves garlic minced
- 1 medium zucchini - cut in half lengthwise & sliced
- 1 20 oz jar Prego traditional Italian sauce
- 1 16 oz pkg Ziti - cooked & drained
- 1 1/2 cups Shredded mozzarella cheese
- 1 cup Ricotta cheese
- 1/4 cup Parmesan cheese - grated

Macaroni & Cheese - BEST RECIPE

Cook macaroni and LET IT SIT UNTIL MOST OF THE WATER IS ABSORBED - probably 1 hour or so
- 1 8 oz Elbow macaroni = 1/2 BOX
- 1 cup Sour Cream
- 3/4 teaspoon Salt
- 16 oz Sharp Cheese - shredded
- 1 cup Cottage cheese
- 1 Egg - slightly beaten - optional Salt, pepper and paprika
- 3 cups milk
- 2 tablespoons flour or corn starch
- 1 shake Louisiana hot sauce - OPTIONAL
Italian Hot Chocolate

Place shaved chocolate in a small saucepan over low heat and add 2 tablespoons milk and vanilla extract
- 4 oz. dark chocolate, shaved
- 1 1/2 cups milk
- 1 tablespoon sugar
- 3/4 tablespoon cornstarch
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
