Maple Cider Vinegrette & Spinach Apple Salad

Whisk together cider vinegar and everything except oil
- 1/3 cup Cider vinegar
- 2 Tbsp. Pure Maple Syrup
- 1 Tbsp. Dijon mustard
- 1/4 tsp. Kosher salt
- 1/4 tsp. Pepper
- 2/3 cup Olive Oil

Preheat oven to 450 Line pie crust edges with foil & bake at 450 for 8 minutes
- 1 pie crust - unbaked
- 2 tbsp butter
- 1/3 cup onion - finely chopped
- 3 tbsp red & green bell peppers - diced
- 1/2 cup mushrooms - diced
- 3 large eggs beaten
- 16 oz Sour cream - DIVIDED
- 5 slices Bacon - cooked & crumbled
- 1 1/2 cups Swiss cheese - grated
- 1 cup Mild Cheddar cheese - grated
- 1 dash Salt & pepper
Paul Dean's Best Ham Salad

Mix all ingredients until well blended
- 2 cups leftover ham, chopped in a food processor
- 1 cup finely diced celery
- 1/4 cup finely minced sweet onion
- 1 teaspoon Dijon mustard
- 2 hard-boiled eggs, diced
- 1/4 cup hot pickle relish, drained
- 1/2 cup mayonnaise

- 1-8 oz. tube crescent roll dough
- 3 oz. cream cheese, softened
- 1/4 cup mayonnaise
- 3/4 cup cooked crab meat, chopped
- 2 green onions, chopped
- 1/8 to 1/4 teaspoon cayenne pepper
- salt and pepper, to taste

- 1/4 cup Melted butter
- 1/2 tsp. Dry mustard
- 3/4 cup Milk
- 1 lb Lobster in chunks
- 1 tsp. Salt
- 1/4 cup Flour - all purpose
- 1/2 tsp. Paprika
- 1/2 cup Whipping Cream
- 1/2 cup Mushrooms - sliced
- 1/4 cup Sherry
- Cooked Rice
Butternut Squash Soup (Panera Bread)

Adjust juice, broth and Half & Half if squash is very large
- 2-3 tbsp. extra virgin coconut oil
- Salt and pepper to taste
- 15 oz. can Libby's pumpkin
- 2 cups apple juice (add more if nec.)
- 1 1/2 cups vegetable broth
- 1 1/2 cups half-and-half
- 1 1/2 tbsp. honey (add more if nec.)
