Apple Pie Paleo Granola

This granola is just fantabulous! I’m always looking for great healthy snacks and this is absolutely perfect!
- 1/2 cup almonds
- 1/2 cup pecans
- 1/2 cup walnuts
- 1/4 cup pumpkin seeds
- 7 medjool dates, chopped
- 1/3 cup unsweetened coconut, shredded
- 1 tablespoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ground ginger
- 1/4 teaspoon sea salt
- 1/2 cup unsweetened apple sauce
- 1/3 cup coconut oil, melted
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
Coconut Apple Crumble

Preheat oven to 375 degrees Fahrenheit
- granny smith apples - 6, peeled and thinly sliced
- pure maple syrup - 3 tablespoons
- ground cinnamon - 1 teaspoon
- unsweetened coconut flakes - 3/4 cup
- coconut oil - 2 tablespoons, melted
- pure maple syrup - 1 tablespoon
- ground cinnamon - 2 teaspoons
- ground ginger - 1/2 teaspoon
- dash salt
White Fish Provencal (Paleo)

Preheat oven to 375 degrees F
- 1 1/2 pounds cod fillets
- 4 cups brussel sprouts, cut in quarters
- 3 tablespoon extra virgin olive oil
- 1/2 cup white onion, chopped
- 1 (14 1/2 ounce) can diced tomatoes, drained
- 1/2 cup kalamata black olives, pitted and cut in half
- 2 tablespoon white wine
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried thyme
- Salt and pepper to taste
Frozen Banana Bites

Slice each banana into 1/2 inch slices
- 4 ripe bananas
- Almond butter
- Dark chocolate chips (I used one whole bag)
- 2 Tbsp coconut oil
Banana Bread Pancakes

In a blender or food processor (I use my Vita Mix), combine the bananas, eggs, flaxseed, and cinnamon
- 2 medium bananas
- 4 large eggs (preferably from organic, pastured chickens)
- 2 tablespoons ground flaxseed
- 2 teaspoons ground cinnamon
- Coconut oil, for cooking
- Optional: chopped walnuts
Dairy Free Sweet Potato Soft Cream (Paleo)

Remove the pits from the dates, if using
- 1 cup mashed sweet potato flesh, either roasted or steamed in the crockpot
- 1 (14-ounce) can full fat coconut milk, Native Forest is BPA-free
- 1/2 medium avocado
- 6-8 dates, soaked until plump or 15-20 drops liquid stevia, such as NuNaturals
- 1/4 cup almond or coconut milk
Pumpkin Pie Chocolate Chip Muffins

Preheat the oven to 350 degrees F
- 1 cup pumpkin puree
- 1/2 cup applesauce, or 1 ripe banana mashed
- 4 eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon liquid stevia
- 1/2 cups almond flour
- 1/3 cup coconut flour
- 1 tablespoon pumpkin pie spice
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup dairy-free dark chocolate chips
Polish Stew [Bigos]

Cut your washed cabbage in thin slice and boil until tender in a pot
- 1/2 medium cabbage;
- 4 cups of sauerkraut;
- 1 can tomato paste;
- 1/2 lb bacon sliced;
- 1 lb pork diced (any parts that can be sautéed is good);
- 1 lb Kielbasa sausage sliced (optionally substitute with a quality sausage from your butcher);
- 1 large onion diced;
- 2 cloves garlic minced;
- 1 bay leaf;
- Optional salt and pepper to taste;
