- 1 1/2 cups uncooked long-grain rice
- 1 1/2 pounds medium-size raw shrimp
- 1/2 cup butter (1/4 cup works fine)
- 1 red bell pepper, chopped
- 1 onion, chopped
- 3 celery ribs, chopped
- 2 garlic cloves, minced
- 4 green onions, chopped
- 2 (10 3/4-oz.) cans cream of shrimp soup, undiluted*
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1 cup (4 oz.) shredded Cheddar Cheese
- 1/4 cup fine, dry breadcrumbs (I use crushed Ritz crackers tossed with a tbps. or 2 of melted butter)

- 1 (15.25 ounce) can whole kernel corn, drained
- 1 red onion, diced
- 3/4 cup salsa, or as desired
- 1/2 cup olive oil
- 1/2 cup chopped fresh cilantro
- 3 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- 1 1/2 teaspoons ground cumin
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper

Chili Cheese Casserole

1.Pre-heat your oven to 400 degrees
- 1/2 pound elbow macaroni, cooked for 1 minute less than the package recommends
- 1 pound lean ground beef
- 3 tablespoons olive oil
- 1 large yellow onion or two small yellow onions
- 6 garlic cloves, minced
- 1 1/2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1/2 teaspoon black pepper
- 1- 28 ounce can crushed tomatoes
- 1- 14.5 ounce can diced tomatoes
- 1 tablespoon light brown sugar
- 2 and 1/2 cups co-jack cheese, or other cheese of choice
- Chili Cheese Fritos for garnish
- 2 green onions, chopped for garnish
