1. Cook fettuccine according to package directions
- 8 ounces uncooked fettuccine
- 4 bacon strips, chopped
- 3/4 pound boneless skinless chicken breasts, cubed
- 1 can (14-1/2 ounces) diced tomatoes with garlic and onion, drained
- 2 cups fresh baby spinach, coarsely chopped
- 3/4 cup heavy whipping cream
- 1/2 teaspoon dried sage leaves
- 1/2 cup grated Parmesan cheese, divided
- 3/4 pound peeled and deveined cooked medium shrimp
Greek Chicken Kebabs with Tzatziki Sauce

It's a great day for grilling! Marinade some chicken, soak some skewers, chop some veggies and make some tzatziki,
- TZATZIKI:
- 1 3/4 to 2 pounds bonless skinless chicken breasts, diced into 1 1/4-inch cubes
- 1/4 cup plus 2 tablespoons olive oil, divided, plus more for grill
- 3 tablespoons fresh lemon juice
- 1 tablespoons red wine vinegar
- 3 cloves garlic, minced
- 2 teaspoons dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon ground coriander
- Salt, to taste
- Black pepper, freshly ground, to taste
- 2 large red bell peppers, diced into 1 1/4-inch pieces
- 3 small zucchini, sliced into rounds slightly under 1/2-inch thick, about 1 pound
- 1 large red onion, diced into 1 1/4-inch wedges
- 1 medium cucumber, peeled, seeded and chopped into chunks
- 1 teaspoon salt, plus more to taste
- 2 (5.3-ounce) containers plain Greek yogurt, about 1 cup
- 1 clove garlic, finely minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon extra virgin olive oil
- 1 tablespoon fresh parsley, chopped, plus more for garnishing kebabs

Monterey Spaghetti

This is a recipe for a side dish but you can add some leftover chicken to make it a main meal
- 4 ounces spaghetti, broken into 2-inch pieces
- 1 egg
- 1 cup (8 ounces) sour cream
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 2 cups (8 ounces) shredded Monterey Jack cheese
- 1 package (10 ounces) frozen chopped spinach, thawed and drained
- 1 can (2.8 ounces) french-fried onions, divided
Lightened Up Bang Bang Shrimp with Napa Cabbage Slaw

In a bowl, whisk together the mayo, chili sauce and sriracha, then set it aside until ready to use
- 5 tablespoons mayonnaise
- 2 tablespoons sweet chili sauce
- 2 teaspoons sriracha
- 1 pound raw, peeled and deveined shrimp
- 2 tablespoons cornstarch
- 1 tablespoon canola oil
- 1 head napa cabbage, sliced into shreds
- 1 cup butter lettuce, sliced into shreds
- 1/4 head red cabbage, sliced into shreds

Pork Tenderloin with Mushrooms

1.In a medium bowl, whisk together beef broth, soy sauce, red wine vinegar, and balsamic vinegar
- 2 cups beef broth
- 1/3 cup soy sauce
- 2 tablespoons red wine vinegar
- 2 tablespoons balsamic vinegar
- 2 to 2 1/2 pounds pork tenderloin, trimmed and cut into 1/2-inch slices
- 1 tablespoon extra virgin olive oil
- 3 tablespoons butter, divided
- 3 tablespoons flour
- 16 ounces fresh mushrooms, washed & sliced
- 2 large cloves garlic, finely minced
- Cooked rice or noodles (such as wide egg noodles)
Bacon Cheddar Pork Chops

Preheat your oven to 400 degrees
- 4 boneless, medium thickness pork chops
- 2 eggs
- 1/4 cup of milk
- 1.5 oz real bacon bits (half of a 3oz package)

- 3 tablespoons sugar
- 1 1/2 teaspoons baking powder

Minestrone Soup

- 4 tablespoons margarine (I use olive oil)
- 3/4 cup chopped onion
- 1/4 cup chopped celery
- 1/2 cup chopped carrots
- 1 (19 ounce) can cannellini beans (I also add 1 can kidney beans)
- 1/2 cup shredded cabbage
- 1 (14.5 ounce) can stewed tomatoes
- 1 tablespoon tomato paste
