Cheese Baked Chicken Penne

Make two dinners at once with this recipe for Cheese Baked Chicken Penne
- 6 tablespoons butter, plus more for baking dishes
- Kosher salt and black pepper, to taste
- 1 pound penne rigate
- 1 teaspoon olive oil
- 2 boneless, skinless chicken breast halves, about 8 ounces each, halved horizontally, can use leftover cooked chicken)
- 1/2 cup plus 2 tablespoons flour
- 6 garlic cloves, finely minced
- 6 cups whole milk
- 10 ounces white or cremini mushrooms, trimmed and thinly sliced, can use 8 ounces of button mushrooms
- 1 cup sliced oil-packed sun-dried tomatoes, drained
- 1 1/2 cups shredded provolone, about 6 ounces, can use an italian blend that has provolone in it
- 1 1/2 cup freshly grated Parmesan, about 6 ounces
Roasted Salt & Vinegar Potatoes

1. Adjust oven rack to upper-middle position and heat oven to 500 degrees
- 1 to 2 to 1 1/2 2 1/2 inches in diameter. If you prefer to use kosher salt, you will need 1 1/2 cups of Morton kosher salt or 2 1/2 cups of Diamond Crystal. Cider vinegar works here, too.

Winter Fruit Salad with Lemon Poppy Seed Dressing

- 1/2 cup white sugar
- 1/2 cup lemon juice
- 2 teaspoons diced onion
- 1 teaspoon Dijon-style prepared mustard
- 1/2 teaspoon salt
- 2/3 cup vegetable oil
- 1 tablespoon poppy seeds
- 1 head romaine lettuce, torn into bite-size pieces
- 4 ounces shredded Swiss cheese
- 1 cup cashews
- 1/4 cup dried cranberries
- 1 apple - peeled, cored and diced
- 1 pears - peeled, cored and diced
Fudge Pie

Cook butter and chocolate in a small saucepan over low heat, stirring often until melted
- 3/4 cup butter or margarine
- 3 (1-ounce) unsweetened chocolate squares
- 3 large eggs
- 1 1/2 cups sugar
- 3/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 3/4 cup chopped pecans, toasted and divided
- Toppings: vanilla ice cream and chocolate syrup
Avocado Dip

1. In a large bowl, mash avocados with a fork or potato masher
- 2 avocados; halved, seeded and scooped
- 1 1/2 cups sour cream
- 1 teaspoon cumin
- 1/2 teaspoon Sriracha or other hot sauce
- 3/4 cup chunky salsa
- 3/4 cup Sargento shredded mild cheddar cheese, divided use
- 3/4 cup chopped tomato; divided use
- salt and pepper to taste
