1. Combine sugar and vinegar in a 6 quart pot; bring to a boil, stirring until sugar is dissolved
- 1 cup distilled white vinegar
- 2 cups white sugar
- 6 cups sliced, semi-ripe mangos
- 1 onions, chopped
- 1/2 cup golden raisins
- 1/2 teaspoons ground ginger
- 1 clove garlic, chopped
- 1 teaspoon mustard seeds, whole
- 1/4 teaspoons red pepper flakes

Strawberries: 1. Toss the strawberries with the sugar and orange juice
- Strawberry coulis:
- 1 quart strawberries, topped and quartered
- 1/2 cup sugar
- 1/2 cup orange juice
- Pancakes:
- 2 cups all-purpose flour
- 3/4 cup sugar
- 1/2 teaspoon salt, plus a pinch for egg whites
- 1 heaping teaspoon baking powder
- 4 eggs, separated
- 1 heaping cup ricotta cheese
- 3/4 cup milk
- 2 Meyer lemons, zested and juiced
- Butter, for cooking the pancakes
- Powdered sugar, for dusting

1. Mix together flour, cream of tartar, instant yeast and powdered milk
- 4 cups bread flour
- 1/2 tsp cream of tartar
- 2 tsp instant yeast
- 2 tsp powdered milk
- 1 egg
- 1 cup cold water
- 1/4 cup sugar
- 1 tsp salt
- 1 cup unsalted butter

1. Heat oven to 400ºF. 2
- 1 1/2 cups sugar
- 1/2 cup butter, softened
- 1/2 cup shortening
- 2 eggs
- 2 3/4 cups all-purpose flour

- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup sugar

1. Brown the sausage. Remove the sausage and set aside
- 1 cup oil
- 1 cup flour
- 2 large onions, chopped
- 2 bell peppers, chopped

- 4 quarts chicken stock
- 2 bay leaves

- 1 bunch scallions, tops only, chopped

- 1 (3 pound) boneless pork loin roast, cut into 2 inch pieces
- 1/2 teaspoon salt
- Ms. Dash Chipotle Spice
- 2 (4 ounce) cans diced green chile peppers
- 3 cloves garlic, crushed
- 1/4 cup chipotle sauce
- 1 Can Roasted Tomatoes
- 1 Onion
- 2 3/4 cups water
- 1 1/2 cups uncooked long grain white rice
- 1/4 cup fresh lime juice
- 1/4 cup chopped cilantro
