Chipotle Chicken Quesadillas w/White Sauce

For the Quesadillas: In a large frying pan, heat olive oil until warm
- For the Quesadillas:
- 1 Tablespoon Olive Oil, Or As Needed
- 1/2 whole Onion, Diced
- 2 whole Banana Peppers Diced
- 1 whole Chicken Breast
- 1 teaspoon Cayenne Pepper
- 2 teaspoons Paprika
- Salt
- Pepper
- 2 cups Monterey Jack Cheese
- 3 whole Flour Tortillas
- For the White Sauce:
- 1/4 cup butter (4 tablespoons)
- 1/4 cup flour
- 2 cups chicken stock, heated
- 8 ounces sour cream
- 4 ounce can chopped green chilies, drained
- 1/4 teaspoon cayenne powder
- 1 teaspoon or more of Rocket Fuel, or your favorite hot sauce (optional)
Buffalo Wings

Cut off wing tips (discard or reserve for other use such as making stock)
- 2 lbs chicken wings (about 12 wings)
- 3 Tbsp butter, melted
- 4 Tbsp bottled hot pepper sauce (like Crystal or Frank's Original)
- 1 Tbsp paprika
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
- Celery sticks (optional)
Hillbilly Dinner

With a large pot bring water to boil
- 1 1/2 pound · ground beef
- 1/2 cup · elbow macaroni
- 1 teaspoon · garlic powder
- 8 oz · can tomato sauce
- 1 cup · tomatoes, stewed or diced
- 15 oz · whole kernel corn, drained (from can)
- (to taste) · salt & pepper
- 1/2 · onion chopped
Veg-All Casserole

Preheat oven to 350°. Grease a 3 quart casserole dish
- 2 Cans Veg-All
- 1 Can Sliced Water Chestnuts
- 1 Cup Sharp Cheddar Cheese (shredded)
- 1 Cup Mayonnaise
- 1 Cup Celery (chopped)
- 1/2 Cup Onion (chopped)
- 1/4 lb Crackers (crushed)
- 1 Stick Margarine (melted)

Blend butter, coconut, pecans, peanut butter, sugar, vanilla, and crumbs
- 2 Sticks Butter or Margarine (melted)
- 1 Cup Coconut
- 1 Cup Pecans (chopped)
- 1/2 Cup Peanut Butter
- 1 Block Paraffin
- 1 Large Bag Semi-Sweet Chocolate Chips
- 1 Box Confectioner Sugar
- 1 tsp Vanilla
- 1 1/2 Cup Graham Cracker Crumbs
Pepper Steak

Preheat kettle on stove over medium heat for 2-3 minutes
- 1 1/2-2 lbs Round Steak (cut into 1 inch strips)
- 1 Garlic Clove (crushed)
- 1 Cup Chopped Onion
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1/4 tsp Ginger
- 1 tsp Sugar
- 1/4 Cup Soy Sauce
- 2 Green Peppers (cut into thin strips)
- 4 Tomatoes (cut into thin strips) or 1-1 lb Can Tomatoes
- 1-1 lb Can Bean Sprouts (drained)
- 1 Tbsp Cornstarch
- 1/2 Cup Cold Water

Flank Steak

- 1 cup FRENCH'S® Classic Worcestershire Sauce
- 2 - 3 pounds boneless sirloin, round or flank steak
- 4 teaspoons steak seasoning or salt and pepper to taste
Sausage and Cheese Bread Roll

- 1 -- 1# breakfast sausage (Jimmy Dean Sage is our favorite)
- 8 to 10 oz. shredded cheese (we typically use cheddar, but anything is good)
- 2 eggs (raw, used as a binder for other ingredients)
