Dan Dan Noodles

Cook noodles; keep warm. Whisk sherry & next 6 ingredients together; set aside
- 1/2 lb. spaghetti noodles
- 1/4 cup dry sherry
- 1/4 cup chicken broth
- 3 T. chunky peanut butter
- 2 T. soy sauce
- 1 T. brown sugar
- 2 tsp. chili garlic sauce
- 1 tsp. sesame oil
- 1/4 cup red bell pepper, chopped
- 3 T. fresh ginger, grated
- 2 T. garlic, minced
- 12-16 oz. ground turkey
- 1/4 cup scallions
Easy Peach Cobbler

Preheat oven to 375 degrees
- 1/2 cup unsalted butter, melted
- 1 cup all-purpose flour
- 1-1/4 cups sugar
- 3 teaspoons baking powder
- Pinch salt
- 1 cup milk
- 4 cups peeled, pitted and thinly sliced fresh peaches (5 to 6 medium peaches)
- 1 tablespoon fresh lemon juice
- Several dashes ground cinnamon or ground nutmeg (optional)

- FOR THE VINAIGRETTE, COMBINE:
- 1 ⁄4 cup balsamic vinegar
- 2 Tbsp. extra-virgin olive oil
- 1 Tbsp. Dijon mustard
- 1 Tbsp. minced garlic
- 1 Tbsp. honey
- Salt and black pepper to taste
- FOR THE SALAD, COOK:
- 1 cup green lentils, sorted and rinsed
- STIR IN:
- 2 cups shredded red cabbage
- 1 cup shredded carrots
- 1 cup thinly sliced scallions
- 1 ⁄2 cup chopped fresh mint
- FOR THE SALMON, COMBINE:
- 1 Tbsp. Dijon mustard
- 1 Tbsp. honey
- 6 salmon fillets, seasoned with salt and black pepper (5–6 oz. each)
- 1 Tbsp. olive oil
- ADD:
- 1 ⁄4 cup balsamic vinegar
- Chopped fresh mint
