Five-spice Ribs with Sweet & Sour Apricot Sauce

Remove membrane from back of ribs, wash & pat dry with paper towels
- 1 rack pork baby back ribs (about 3 lbs)
- 1 T. five-spice powder
- 1/2 tsp. kosher salt
- 1/4 tsp. black pepper
- 1 cup apricot preserves
- 1/4 cup ketchup
- 1/2 cup minced onion
- 2 T. cider vinegar
- 2 T. low-sodium soy sauce
- 1 T. brown sugar
- 1 tsp. grated fresh ginger
- Sliced scallions (optional)
- Sesame seeds, toasted (optional)
K's Potatoes Au Gratin

- 2 pounds Yukon Gold Potatoes, peeled and sliced thinly
- 1 small onion, sliced
- Chives
- Thyme
- Rosemary
- Salt

- 2 tablespoons butter, cut up
- 1/2 cup (or more) Parmesan cheese, shredded
- 1/2 cup (or more) Cheddar jack cheese, shredded
- 4 ounces half and half
- 4 ounces light cream
- 1-1/2 tablespoons flour
Favorite Slow Cooker Turkey Chili

In large skillet, saute turkey in oil until browned
- 1-1/2 lbs. Ground Turkey
- 3 T. olive oil
- 1 onion, chopped
- 1 T. minced garlic
- 1/2 T. ground cumin
- 1/2 T. chili powder
- 2 tsp. dried oregano
- (***or use 1 envelope Chili Seasoning Mix instead of the cumin, chili powder and oregano)
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 (14 oz) can diced tomatoes
- 1 (10 oz) can rotel tomatoes with green chiles
- 4 oz chicken broth
- (1) 8 oz. can tomato sauce
- 1 can navy beans, drained and rinsed
- 1 can Hormel chili beans (Medium Sauce), NOT drained
- 1 small can chopped green chiles
- 1 green bell pepper, diced
Stuffed Flounder

Preheat oven to 400 degrees F (175 degrees C)
- 2 T.butter
- 1/2 large onion, minced
- 1 bunch green onions, chopped
- 1/2 green bell pepper, chopped
- 1 stalk celery, minced
- 3 cloves garlic, minced
- 1 6 oz can crabmeat, drained
- 1/2 lb. shrimp, peeled and chopped
- 1/2 teaspoon Cajun or seafood seasoning
- 3-4 Saltine crackers, crushed
- 1 egg, beaten
- 1/4 cup Parmesan cheese, shredded
- 1 tsp. lemon juice
- 1 tsp. worcestershire sauce
- 1-1/2 lbs. flounder filets
- 1 T. mayonaise
- 1 T. dijon mustard
- 2 T. melted butter

Ultimate Party Pizza Rolls

1) Preheat oven to 400 degrees
- 1 (13.8 ounce) Tube pizza dough
- 1 (15 ounce) can diced Tomatoes, drained (or can use pizza sauce)
- 1 tbsp Italian seasoning

- 1/2 lb. ground beef or sausage, cooked & drained

- 1 tsp. dried oregano

- 1/4 cup panko (Japanese breadcrumbs)
- 2 tablespoons chopped fresh mint
- 2 tablespoons chopped fresh flat-leaf parsley
- 1 (4-ounce) package goat cheese
- 4 (6-ounce) skinless, boneless chicken breast halves
- 2 cups mushrooms, sliced, sauteed in a little butter
- 1/2 onion, chopped, sauteed with mushrooms
- 1/2 teaspoon kosher salt, divided
- 4 teaspoons olive oil, divided
- 1/4 teaspoon crushed red pepper
- 1 (10-ounce) package fresh spinach

Never Fail Potatoes Au Gratin

•In a small nonstick skillet, melt butter
- 2 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1-1/2 cups fat-free milk
- 1/2 cup shredded reduced-fat cheddar cheese
- 1-3/4 pounds potatoes, peeled and thinly sliced (about 5 medium)
- 1 medium onion, halved and thinly sliced
Chicken Spectacular Casserole

Saute mushrooms and celery in 2-3 T
- 3 cups cooked rotisserie chicken
- 1 (6 oz) box Uncle Ben's seasoned wild rice, cooked as directed on box (or rice pilaf)
- 1/2 onion, chopped
- Mushrooms, chopped
- Celery, chopped
- 1 medium jar pimento, chopped
- 1 (14-1/2 oz) can French-style green beans, drained
- 1/2 cup mayonaise
- 1 can low fat cream of celery soup

- 1 can (approx. 7 ounces) tuna, undrained, flaked
- 1 can condensed cream of mushroom soup
- 1/2 cup mayonnaise
- 1 cup milk
- 1 can (4 ounces) sliced mushrooms, drained
- 1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley
- 1 tablespoon chopped pimiento
- 8 ounces noodles, cooked and drained
- 1/2 cup bread crumbs, tossed with 1 to 2 tablespoons melted butter
