Bobby Flay's Sliders with Chipotle Mayonaise

Chipotle Mayonnaise: Directions Add all the ingredients to a food processor and puree
- Chipotle Mayonnaise:
- 1 cup mayonnaise
- 2 chipotles in adobo sauce
- 1 tablespoon adobo sauce
- 1/2 lime, juice
- Salt and freshly ground black pepper
- Sliders:
- 1 to 1 1/2 pounds ground chuck, 80/20
- Salt and freshly ground black pepper
- Worcestershire, Dijon, chopped onions
- Cheese slices, your choice
- Mini burger buns
- Burger Bar (if desired):
- Chipotle Mayonnaise
- Pickles
- Red onion slices
Bacon Potato Salad

- 6 to 8 medium potatoes (about 3 pounds), peeled and cut into 1-inch cubes
- 1/2 pound bacon, cooked and crumbled
- 6 green onions, chopped
- 2 celery ribs, finely chopped
- 2 tablespoons diced pimiento, drained
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 hard boiled eggs, chopped
- 1 tsp. celery seed (optional)
- Garnishes: paprika, celery sticks
Mrs. Thompson's Carrot Cake

•In a large bowl, beat the first five ingredients until well blended
- FROSTING:
- 3 cups shredded carrots
- 1 can (20 ounces) crushed pineapple, well-drained
- 2 cups sugar
- 1 cup canola oil
- 4 eggs
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 package (8 ounces) cream cheese, softened
- 1/4 cup butter, softened
- 2 teaspoons vanilla extract
- 3-3/4 cups confectioners' sugar
Low-Fat Caesar Salad Dressing

In the bowl of a food processor add the cheese, the lemon juice, garlic clove, mustard and the anchovies
- 1/3 cup grated Parmigiano Reggiano, good quality
- 1/4 cup fresh lemon juice
- 1 small garlic clove
- 1/2 tbsp Dijon mustard
- 2 anchovy fillets
- 1 tbsp extra virgin olive oil
- 5 tbsp fat free Greek yogurt
Greek Salad Dressing

- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon Dijon mustard
- 1/4 cup good red wine vinegar
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper

K's Yummy Vegetable Soup

Brown beef and onions in skillet; drain well and add to large soup pot along with carrots
- 2 lbs. ground chuck
- 2 onions, chopped
- 3-4 stalks celery, chopped
- 2 lbs. carrots, peeled and sliced
- 8 Yukon Gold potatoes, peeled and cut into small chunks
- 2-1/2 quarts water
- 2 T. Better Than Bouillon beef base
- 1 pkt. McCormick's Slow Cooker Vegetable Beef Soup Mix
- Several shakes of Maggi's Seasoning (optional)
- Pepper to taste
- 2 (14 oz) cans diced tomatoes
- 1 (14 oz) can stewed tomatoes
- 12 oz. pkg frozen lima beans, thawed
- 12 oz. pkg frozen corn, thawed
- 12 oz. pkg frozen chopped okra, thawed
- 12 oz. pkg frozen green beans, thawed
- 3/4 head cabbage, sliced
Basting Sauce for Ribs

Combine all ingredients; cover and let stand 8 hrs
- 1/4 cup brown sugar
- 1-1/2 T. Dry Spices for Ribs
- 2 cups red wine vinegar
- 2 cups water
- 1/4 cup Worcestershire Sauce
- 1/2 tsp. hot sauce
- 1 bay leaf
Pulled Pork Griddle Cakes

- 1 1/2 cups self-rising white cornmeal mix
- 1/2 cup all-purpose flour
- 1 tablespoon sugar
- 1 2/3 cups buttermilk
- 3 tablespoons butter, melted
- 2 large eggs, lightly beaten
- 2 cups chopped pulled barbecued pork (without sauce)
Lightened Creamed Spinach

- 2 tsp butter
- 1/2 cup shallots, minced
- 1 clove garlic, minced
- 2 tbsp flour
- 1 1/2 cups fat free milk
- 2 tbsp parmesan cheese
- 1/4 tsp nutmeg
- 1/4 tsp fresh pepper
- salt to taste
- 4.4 oz Boursin Light
- 16 oz bag frozen chopped spinach, thawed and drained of all moisture
The Best Seafood Stuffed Mushrooms

1.Preheat oven to 400 degrees F (200 degrees C)
- 1 (8 ounce) package softened cream cheese
- 1 egg yolk
- 1 tablespoon Italian bread crumbs
- 1 green onion, chopped
- 1 tablespoon lemon juice
- 1 teaspoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 pinch salt and ground black pepper to taste
- 1 (6 ounce) can snow crab, drained (or 8 oz tub)
- 1 (4 ounce) can small shrimp, drained (or frozen shrimp, thawed)
