Grilled-Shrimp Gyros with Herbed Yogurt Spread

Peel shrimp, and devein, if desired
- 1 1/2 pounds unpeeled, medium-size fresh shrimp
- 2 tablespoons Greek seasoning
- 2 tablespoons olive oil
- 6 (12-inch) wooden skewers
- 4 (8-inch) pita rounds or gyro rounds
- Herbed Yogurt Spread
- 1/2 cup crumbled feta cheese
- 1 large tomato, chopped
- 1 cucumber, thinly sliced
Apple Potato Pancakes

- 3 russet potatoes, peeled and shredded
- 1 Granny Smith apple - peeled, cored, and shredded
- 2 eggs
- 2 tablespoons all-purpose flour3 green onions, diced

Chicken Bagel Sandwiches with Bacon-Walnut Cream Cheese

Preheat the oven to 375 degrees
- 8 slices bacon
- 1 8 ounce package Neufchael, softened
- 3/4 cup toasted walnuts, coarsely chopped

Baked Chicken Amandine

1. In a greased 13-in. x 9-in
- 3 cups cubed cooked chicken
- 1 (10 ounce) package frozen chopped broccoli, thawed
- 2 (10.75 ounce) cans condensed cream of chicken soup, undiluted
- 1 cup mayonnaise*
- 2 cups shredded Cheddar cheese
- 1 cup crushed butter-flavored crackers
- 1/4 cup butter or margarine, melted
- 1/2 cup sliced almonds
Sliced Steak Reubens with Russian Dressing

1.Season the steak with salt, pepper and the Old Bay
- 1 flank steak (1 1/2 to 2 lbs.), at room temperature
- Coarse salt and cracked black pepper
- 1 tbsp. Old Bay Seasoning
- 1 pkg. (1 lb.) prepared sauerkraut
- 1 cup sour cream
- 3 tbsp. ketchup
- 2 tbsp. dill pickle relish
- 1 tbsp. prepared horseradish

1. Bring broth to a simmer in a large saucepan over medium-high heat
- 9 cups reduced-sodium chicken broth
- 2 (8-oz.) packages fresh cremini mushrooms
- 6 fresh thyme sprigs
- 1 bunch flat-leaf parsley
- 2 1/2 ounces chicken livers or gizzards
- 2 tablespoons olive oil
- 6 tablespoons unsalted butter, divided
- 1 large yellow onion, minced
- 2 celery ribs, minced
- 1 1/2 cups uncooked Arborio (short grain) rice
- 1 cup dry white wine $
- 1/3 cup freshly grated Parmesan cheese
- 2 teaspoons chopped fresh thyme
Cucumber Gin and Tonic

In shaker, muddle gin, cucumber, cilantro and lime
- 2/3 cup gin
- 1/2 English cucumber, thinly sliced crosswise
- 1/2 cup roughly chopped cilantro
- 1 tablespoon fresh lime juice
- 1 1/2 cups ice cubes
- 1 cup tonic, chilled

- 1 russet potato, diced
- 3 ounces cured chorizo, chopped
- 6 eggs

Watermelon and Mint Cooler

- 12 cups seedless watermelon cubes
- 1/2 cup fresh lime juice
- 1/2 cup lightly packed fresh mint leaves
- 2/3 cup cachaca, rum or vodka (optional)

- 1 clove garlic, minced
- 1 green onion, finely chopped
- 2 cups chicken broth
- 1 cup uncooked white rice
- 1/2 tsp. chopped fresh parsley
- salt and pepper to taste
