Ingredients

  • Tomato mixture:
  • 2 cups cheddar cheese, shredded
  • 1 cup monterey jack cheese, shredded
  • 1/2 cup mayonnaise
  • 1 (8 oz) can corn, whole kernal, drained
  • 1 (4 oz) can green chili peppers, chopped and drained
  • 2 tsp. chipotle chili peppers in adobo sauce finely chopped canned
  • 1/4 tsp. garlic powder
  • 1 medium tomato, chopped
  • 1/4 cup scallions, sliced
  • 2 Tbs. fresh cilantro, chopped

Step 1

Stir together cheeses, mayo, corn, chili peppers, chipotle chili peppers, and garlic powder in a large mixing bowl. Spread mixture into a quiche dish. Cover and chill up to 24 hours. To serve, bake cheese mixture in the dish in a 350 degree oven for about 25 minutes. Spoon tomato mixture in the center. Serve with tortilla chips
