Makeover Chocolate Zucchini Bread

1. In a large mixing bowl, beat the sugar, eggs, applesauce, oil and vanilla until well blended
- 1 1/4 cups sugar
- 3 eggs
- 2/3 cup unsweetened applesauce
- 1/3 cup canola oil
- 3 tsp vanilla
- 1 1/2 flour
- 1 cup cake flour
- 1/2 cup cocoa
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp baking powder
- 2 cups shredded, peeled zucchini
Frosted Butterscotch Cookies

In a bowl stir together flour, baking soda, baking powder and salt; set aside
- 2 1/2 cups flour
- 1 tsp baking soda

- 2 slightly beaten eggs

- 1 tbs sugar
- 1/2 lb butter
- 4 egg yolks, beaten
- 2 1/2 cup flour

- 1/2 lb powdered sugar
- 1 tsp vanilla
- 1 tsp lemon juice

Grilled Steak and Ratatouille Salad with Basil-Garlic Vinaigrette

1. Preheat grill to 350° to 400° (medium-high) heat
- 2 (8-oz.) beeftenderloin fillets
- 1 tsp freshly cracked pepper
- 1/2 tsp kosher salt
- 2 small yellow squash, cut in half lengthwise
- 2 small zucchini, cut in half lengthwise
- 2 small eggplants, cut in half lengthwise
- 3 plum tomatoes, cut in half lengthwise
- 1 (8 oz) pkg romaine lettuce heart leaves
- Basil-Garlic Vinaigrette (double this recipe)
- 1/4 cup red wine vinegar
- 1 garlic clove, minced

Holiday Beef Brisket

- 1 fresh beef brisket (3 lbs)
