Fruit Preserves Xmas Cookies

Cream butter and sugar, mix in flour
- 1 C butter
- 1/2 C confectioner sugar
- 2 C flour
- 1/4 C raspberry or apricot jam
- crushed nuts (opt.)
Tea Cake Cookies

Cream butter with sugar. Mix driy ingredients together, alternately with wet ingredients, add to creamed mixture
- 1 C butter
- 2 C sugar
- 3 beaten eggs
- 4 t baking powder
- 2 t nutmeg
- 2 t cinnamon
- 2 T milk
- 3 C flour
Roasted tomatoes

Halve each tomato. For plum tomatoes, scoop out core and seeds
- 2 pints cherry tomato or plum tomatoes
- 1 t kosher salt
- 1 t pepper
- Fresh basil leaves
- Olive oil
- Balsamic vinegar
Wild Rice and Fruit Salad

- 1 cup wild rice (6oz)
- kosher salt
- 3 navel oranges ......(I used 1 extra)
- 2 Tabl. olive oil
- 2 Tabl. orange juice
- 2 Tabl. raspberry vinegar
- 1/2 cup seedless green grapes, cut in half (again I used a bit more)
- 1/2 cup toasted pecans
- 1/4 cup dried cranberries
- 2 Tabl. scallions, white and green parts, chopped
- 1/2 tsp. salt and fresh ground black pepper
Fettucini with Chicken Cream Sauce

1. Cook noodles according to package directions
- 4 T Butter
- 1 T Olive oil
- 3 Boneless, skinless chicken breast, cut into 1” pieces
- 1/4 ¼ C Dry Vermouth
- 1/2 ½ C Whipping Cream
- 3/4 ¾ lb. Fettuccini
Blueberry sauce

Serve with cheese blintzes, pancakes or crepes
- 3/4 cup freshly squeezed orange juice (3 oranges)
- 2/3 cup sugar
- 1 tablespoon cornstarch
- 4 half-pints fresh blueberries
- 1 teaspoon grated lemon zest
- 1 tablespoon freshly squeezed lemon juice
Ham Loaf

1. Mix ground ham, ground pork, 1 T prepared mustard, milk, eggs and bread crumbs
- 2 2# 2# ground ham
- 2 2# 2# ground pork
- 1 1 1 T prepared mustard
- 3/4 3/4 3/4 C milk
- 2 2 2 eggs
- 2 2 2 C bread crumbs
- 2 2 2 T cornstarch
- 1 1 1 T prepared mustard
- 1/2 1/2 1/2 C brown sugar
- 1/4 1/4 1/4 C cider vinegar
- 1 1 1 C water
- 10 10 jar 10 oz jar currant jelly
- 1/2 1/2 1/2 C currant raisins
Johnny Cakes

1. Mix and sift all dry ingredients
- 1 C cornmeal
- 1/2 C flour
- 3 t baking powder
- 1/2 t salt
- 2 T sugar
- 1 egg
- 1 1/2 C sweet milk
- 4 T oil or melted butter
Meatloaf

Top with mixture of 1/4 C catsup, 2 T brown sugar, 1 t dry mustard Can add 1 T Worcestershire, 1/2 t dry mustard,
- 1 1/2 lbs. Ground beef
- 2 Eggs, beaten
- 3/4 C Milk
- 1/2 C Dry Bread Crumbs
- 1/4 C Onion, chopped, sautéed to slightly soften
- 4 oz cremini mushrooms, finely chopped
- 1 tablespoon fresh basil, chopped (can also use 1.5 teaspoons dried for each of the following herbs)
- 1 tablespoon fresh oregano, chopped
- 1 tablespoon fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Curried Cauliflower Soup

1. Separate cauliflower into florets
- 1/2 ½ Cauliflower head, med. Sized
- 5 C Chicken broth
- 1 T Olive oil
- 1/2 ½ t Curry powder
- Pinch Cayenne
- 1 1/4 1 ¼ t Salt
- 1/8 t Black Pepper
- 1/2 ½ C Orzo pasta (tiny in size)
