Fingerling Potatoes with Aioli

Includes raw eggs. Use only fresh, salmonella treated eggshell, eggs
- For the Aioli:
- 2 1/2 pounds fingerling potatoes, unpeeled
- Kosher salt
- 1 (1/2-inch thick) slice white bread, crust removed
- 2 tablespoons Champagne or white wine vinegar
- 6 large garlic cloves, chopped
- 2 extra-large egg yolks, at room temperature
- 1/2 teaspoon grated lemon zest
- 3 tablespoons freshly squeezed lemon juice
- 1/2 teaspoon saffron threads
- Kosher salt
- Freshly ground black pepper
- 1 1/2 cups good olive oil

Chocolate Espresso Torte

A rich dessert that's always a hit
- 2 C unsalted butter
- 1 C + 2 T sugar
- 1 C + 2 T hot espresso coffee
- 12 oz. bittersweet or semisweet chocolate, chopped
- 4 oz. extra bittersweet chocolate, chopped
- 6 large eggs, room temperature
- 6 large egg yolks, room temperature
Rum Balls

1. Melt chips in a double boiler
- 6 oz. chocolate chips
- 1/2 C orange juice
- 3 T light rum
- 8 1/2 oz. chocolate wafers (FAVORITE brand), crumbled
- 2 C sifted powdered sugar
- 1 C finely chopped walnuts or pecans
- 2 containers of dessert sprinkles
Banana Nut Loaf

1. Mix flour, baking powder, salt and baking soda and set aside
- 2 C flour
- 2 t baking powder
- 3/4 t salt
- 1/2 C shortening
- 1/4 t baking soda
- 1/2 C sugar
- 2 eggs
- 2 very ripe bananas
- 2 t milk
- 1/2 C pecans, chopped (optional)
Plum Cake Tatin

- 10 to 12 purple "prune" plums, cut in half and pitted
- 1 3/4 cups granulated sugar, divided

- 1/3 cup sour cream
- 1/2 teaspoon grated lemon zest
- 1/2 teaspoon pure vanilla extract
- 1 cup plus 2 tablespoons all-purpose flour

- 2 C cake flour
- 2 C sugar
- 1/2 t baking powder
- 1 t baking soda
- 1 t salt
- 1/2 C butter
- 1 C water
- 1 t vanilla
- 4 oz. chocolate, unsweetened, melted
- 2/3 C buttermilk
- 2 eggs
