Bacon and cheese fritatta

- ingredients
- 5 strips bacon
- 2 tablespoons extra-virgin olive oil
- 1 medium onion, finely chopped
- 8 large eggs
- 1/2 cup grated Fontina cheese
- 2/3 cup crumbled goat cheese
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Cornbread Supreme

- 3 pcs. Thick-sliced bacon
- 4 Eggs
- 1 pkg Martha White’s Yellow Cornbread Mix
- 1/2 ½ C Milk
- 1 stick Butter, melted and cooled
- 6 dashes Hot sauce
- 1 med. Onion, chopped
- 1 lb. Cooked Shrimp, coarsely chopped
- 10 oz. Spinach or broccoli, thawed and pressed
- 2 C Cheddar cheese, finely grated
- Parsley, chopped for garnish
Brown Eyed Cookies

Cream butter and sugar until smooth
- 2 C flour
- 3 t baking powder
- 3/4 t salt
- 3/4 C butter
- 1 C sugar
- 1 egg
- 1 1/4 t vanilla
- 2 T cocoa
- 1/2 C chopped nuts
- 1/4 C sugar
- 1 egg white
Lemon Chess Pie

Combine all dry ingredients
- 2 c sugar
- 4 eggs
- 1/8 t salt
- 2 T grated
- 2 T lemon rind
- 1 T flour
- 1 T cornmeal
- 1/4 c melted butter
- 1/4 c milk
- 1/4 c lemon juice
Corn Muffins

- Ingredients
- 3 cups all-purpose flour
- 1 cup sugar
- 1 cup medium cornmeal
- 2 tablespoons baking powder
- 1 1/2 teaspoons salt
- 1 1/2 cups whole milk
- 1/2 pound unsalted butter, melted and cooled
- 2 extra-large eggs
Marshmallows

Combine the gelatin with 1/2 cup of the cold water in the bowl of a stand mixer
- 3 packages unflavored gelatin
- 1 cup ice cold water, divided
- 12 ounces granulated sugar
- 1 cup light corn syrup
- 1/4 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1/4 cup confectioners' sugar
- 1/4 cup cornstarch
- Nonstick spray
Lasagna with Meat Sauce

1. Prepare noodles as directed on package
- 1/2 ½ lb. Lasagna noodles
- 1 lb. Italian sausage, ground
- 1/2 ½ lb. Ground beef
- 2 Garlic cloves, minced
- 2 t Sugar
- 1 T Salt
- 1 1/2 1 ½ t Basil
- 1/2 ½ t Oregano
- 1/4 ¼ t Pepper
- 28 oz Diced tomatoes
- 12 oz Tomato paste
- 1 Egg, beaten
- 15 oz Ricotta
- 2 T Parsley
- 1/2 ½ t Salt
- 1 C Olives, sliced
- 1 lb. Mozzarella, slices or grated
- 3/4 ¾ C Parmesan, grated
Gumbo with Chicken and Sausage

1. Make a roux with the seasoned flour and butter as dark as you can, approx ½ hr
- 1/2 c seasoned flour
- 1 stick butter
- Olive oil to temper butter
- 2 lg yellow onions
- 2 Green Peppers
- 2 Bunches Green Onion
- 6-8 stalks celery
- Minced Garlic to taste (put in last)
- 1 t Thyme
- 1 t Oregano
- 1 T Basil
- 3 Bay Leaves
- 4-6 cans Chicken Stock, preferably roasted garlic
- 1 T salt
- 1 t black pepper
- 1 t white pepper
- 1 t red pepper
- 4-5 really good shots of Worcestershire
- 2 # green onion smoked sausage, if available
- 2 # fresh hot sausage or substitute
- 2 # boneless chicken breasts
- K-Pauls Poultry Seasoning or equivalent
- 2 cans ro-tel tomatoes
- 1 lg bag cut okra, bake at 350` till not slimy, approx 45 min.
