French Onion Egg Noodle Casserole

Heat 1 tablespoon EVOO, a turn of the pan, in a skillet over medium-low to medium heat
- 3 tablespoons EVOO – Extra Virgin Olive Oil, divided
- 3 tablespoons butter
- 3 large onions, sliced
- 4 cloves garlic, minced
- 2 tablespoons fresh thyme, chopped
- 1 large fresh bay leaf
- Salt and pepper
- 1/2 cup dry white wine
- 2 cups beef stock
- 1 pound extra-wide egg noodles
- 1 1/2 cups grated Gruyère cheese
- 1/2 cup grated Parmigiano-Reggiano cheese

Preheat an oven to 350°F
- 4 tsp. Chinese five spice
- 1 Tbs. kosher salt
- 3/4 tsp. freshly ground pepper
- 6 lb. boneless pork shoulder, cut into 10 large pieces
- 3 Tbs. vegetable oil
- 2 yellow onions, diced
- 1 1/2 tsp. finely grated fresh ginger
- 1 1/2 Tbs. minced garlic

- 1 (15 oz) can whole kernel corn, drained
- 1 (15 oz) can cream-style corn
- 1 package Jiffy corn muffin mix (8 oz.)
- 1 cup sour cream
- 1/2 cup butter, melted
- 1 cup shredded cheddar cheese or your favorite

In a spice grinder, combine the white pepper, sage, ginger, cumin, parsley and salt and pulse until finely ground
- 1/2 Tbs. freshly ground white pepper
- 1 Tbs. dried sage
- 1/2 tsp. ground ginger
- 1 tsp. ground cumin
- 1 Tbs. dried parsley
- 1 Tbs. salt
- 1 first-cut beef brisket, 3 to 4 lb.
- 1/4 cup olive oil
- 1 yellow onion, halved and cut into 1/2-inch-
- thick slices
- 2 leeks, both white and light green portions, cut
- into 1/2-inch rounds and rinsed well
- 10 garlic cloves, roughly chopped
- 2 bay leaves
- 2 quarts water, or as needed
- 2 parsnips, peeled and cut into medium dice

- 1 tablespoon olive oil
- 2 cups chopped onion (about 1 large)
- 2 tablespoons dried thyme
- 1 to 2 teaspoons black pepper
- 10 garlic cloves, minced
- 6 cups (1/2-inch) cubed red potato (about 2 pounds)
- 2 cups (1-inch) cut green beans (about 1/2 pound)
- 1/4 cup water
- 2 tablespoons anchovy paste or finely chopped olives
- 2 (14.5-ounce) cans no-salt-added diced tomatoes, undrained
- 8 skinned, boned chicken thighs (about 1 pound)
- 1/2 cup (2 ounces) crumbled feta cheese
