1. Heat oven to 180c/fan 160c/gas 4
- 5 bananas
- 350 g/12 oz. frozen or fresh raspberries
- 250 g/9 oz. gingernut biscuits
- 140 g/5 oz. Demerara sugar
- 140 g/5 oz. butter, melted
Spicy Chimayo Shrimp

- 1 pound large shrimp, peeled and deveined, with tails left on
- 2 tablespoons flour
- 2 teaspoons paprika
- 2 teaspoons brown sugar
- 1 teaspoons salt
- 1 teaspoon Chimayo Spice mix
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 cup white wine
- 1/2 cup chicken or vegetable broth
- 2 tablespoons butter

Grilled Steak Tacos with Tomatillos, Onions and Peppers

To prepare steak, sprinkle steak with salt and pepper
- Steak and Marinade
- 1 2 to 3 pound flat-iron steak
- 1/2 tsp cracked black pepper
- 1 cup bottled salsa verde (like Herdez)
- 1 Tbsp lime juice
- 1 Tbsp cilantro leaves
- Tacos
- 1 small red onion, cut into thirds, horizontally
- 2 fresh jalapenos, cut into halves, lengthwise, seeds and membranes removed
- 4 fresh tomatillo, peeled, scrubbed and cut into quarters
- 2 Tbsp olive oil
- 2 tsp coarse salt
- 1 avacado
- 1/2 cup queso fresco, crumbled
- 8 fajita sized flour tortillas, warmed
- 2 Tbsp cilantro leaves
- 1 fresh lime, cut into wedges

- 1 8 oz. cream cheese
- 3/4 cup Franks Buffalo Wing Sauce
- 1 large can of Tysons Chuck Chicken (white and dark), drained

- Nonstick cooking spray
- 2 1/4 oz. (1/2 cup) unbleached all-purpose flour
- Freshly ground black pepper
- 2 large eggs
- 1 1/2 cups panko breadcrumbs
- 4 thin-sliced boneless, skinless chicken breast cutlets (about 14 oz.)
- Kosher salt
- 5 Tbs. olive oil
- 1/4 cup freshly grated Parmigiano-Reggiano (use the small holes on a box grater)
- 4 oz. fresh mozzarella, thinly sliced
- 1 small yellow onion, chopped
