Vegetable Beef Soup

Brown the beef in a lg. skillet, stirring frequently
- 2 pounds round or top round steak, cubed
- 2 (28 oz.) cans beef broth
- 2 (15 oz.) cans corn, drained
- 1 (28oz.) can diced tomatoes with juice
- 1 (28oz.) can green beans, drained
- 1 (15oz.) can double beef broth
- 1 (10 oz. ) pkg. frozen baby lima beans
- 2 yellow onions, chopped
- 1 1/4 c. sliced carrots
- 1 c. chopped celery
- 2 bay leaves
- 1 t. worcestershire sauce
- 8-9 drops Tabasco sauce
- salt and pepper to taste
- 2 potatoes, peeled and chopped
- 1 c. sliced mushrooms
vegetable Medley

Melt butter in a lg. skillet over med-hi heat; add onion, and cook 5 minutes
- 2 T. butter
- 1 lg. onion, sliced
- 3 med. yellow squash
- 1 lg. red or green bell pepper, seeded and sliced
- 2 lg. tomatoes, cut into wedges, cut into wedges
- 1/4 t. salt
- 1/4 t. t. pepper
- 3 c. fresh spinach
- 1 c. (4 oz) shredded Monterey Jack cheese
Chocolate Caramel Sauce

Combine brown sugar, water, and cornstarch
- 1 box light brown sugar
- 3 c. cold water
- 5 T. cornstarch
- 1/2 c. chocolate sauce
- 4 T. unsalted butter
New Potato Casserole

- 12 medium new potatoes
- salt & pepper
- 16 slices crumbled bacon
- 1/2 c. melted butter
- 2 c. cheddar cheese
- 1/4 c. parsley, chopped, for garnish

Soften ice cream slightly; stir in crumbled macaroons and orange juice or grand marnier
- 1 qt. vanilla Ice Cream
- 24 macaroons, crumbled
- 4 T. orange juice or Grand Marnier
- 1 c. whipping cream
- 4 t. powdered sugar
- 4 T. toasted almonds

- 1/4 c. olive or salad oil
- 2 T. fresh lemon juice
- 1 t. dry mustard
- 1/2 t. cracked black pepper
- 2 cloves garlic, minced
- Dash salt
- 10-12 c. torn salad greens
- Croutons, crumbled goat cheese, broken walnuts and/or balsamic vinegar (optional)
