Chicken Lo Mein

In a bowl mix chicken, cornstarch, chili garlic sauce, and ginger
- 2 lbs diced boneless chicken breasts
- 6 tbs cornstarch
- 6 tsp chili garlic sauce
- 3 tsp minced ground ginger
- 1/2 lb to 3/4 lb spagetti noodles or lo mein noodles (as desired)
- 1 cup chicken stock
- 1 tbs oyster sauce
- 3/4 cup water
- 2 tbs canola oil
- 1 small diced onion
- 1/4 cup - 1/2 cup corn niblets, shredded carrots, shredded peppers, etc (or whatever type of vegetables desired)
- all-purpose flour

Sloppy Joes

Sloppy Joe’s is a classic comfort food dish that brings back memories
- 4 super sloppy sandwiches Ingredients
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 1 1/4 pounds ground beef sirloin
- 1/4 cup brown sugar
- 2 teaspoons to 1 tablespoon steak seasoning blend, such as McCormick brand Montreal Seasoning
- 1 medium onion, chopped
- 1 small red bell pepper, chopped
- 1 tablespoon red wine vinegar
- 1 tablespoon Worcestershire sauce
- 2 cups tomato sauce
- 2 tablespoons tomato paste
- 4 crusty rolls, split, toasted, and lightly buttered
- Garnish: sliced ripe tomatoes
Oven-Fried Catfish

In a shallow bowl, combine cornflakes, celery salt, onion powder, paprika and pepper
- 1 cup crushed cornflakes
- 3/4 teaspoon celery salt
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- 1/8 teaspoon pepper
- 6 catfish fillets (6 oz. each)
- 1/3 cup butter, melted
Clam Dip

- 1 (8 oz.) package cream cheese, softened
- 1 (6 1/2 oz.) can chopped clams
- 1/4 cup sour cream
- 1/4 cup cottage cheese
- 1 tablespoon lemon juice
- 2 teaspoons Worcestershire sauce
- Tabasco sauce to taste (optional)
- Salt and pepper to taste
- Crackers and/or veggies
Teriyaki Beef and Peppers

- 1 lb. boneless beef sirloin steak, thinly sliced
- 1 (12 oz.) package frozen bell pepper and onion strips
- 1 (13.75 oz.) Teriyaki Stir Fry Sauce-Marinade
- 1 (8 oz.) can sliced water chestnuts, drained
- 2-1/2 cups hot cooked Asian wheat noodles or linguine
