Meat mixture: Saute onion in butter
- Meat mixture:
- 1 cup onion, chopped
- 1 stick butter
- 2 lbs. lean ground beef
- Dash nutmeg
- 1/2 teaspoon cinnamon
- 1 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons fresh parsley, chopped
- 1/2 cup water
- 3 tablespoons tomato paste
- Macaroni mixture:
- 1 lb. #5 long macaroni, cooked and drained well
- 3 eggs, slightly beaten
- 1/2 teaspoon salt
- 1 cup Parmesan cheese, grated
- Cream Sauce:
- 1/2 cup butter
- 3/4 cup flour
- 1 quart milk
- 1 teaspoon salt
- 3 eggs, slightly beaten
- 1/2 cup Parmesan cheese, grated
Unstuffed Stuffed Cabbage Casserole

In a soup pot over high heat bring 1 inch of water to a boil
- 1 small cabbage, cored
- 1 lb. lean ground beef
- 1/2 cup chopped onion
- 1 (15-oz.) can plus 1 (8-oz) can no-salt-added tomato sauce, divided
- 1 teaspoon tomato paste
- 2 tablespoons lemon juice
- 2 tablespoons light brown sugar
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cup cooked rice
Eggnog Streusel Coffee Cake

Grease bottom only of rectangular pan, 13x9x2 inches, with shortening
- Streusel Topping:
- 1/3 cup granulated sugar
- 1 tablespoon all-purpose flour
- 1 tablespoon butter, softened
- 1/2 teaspoon ground nutmeg
- Coffee Cake:
- 1 cup granulated sugar
- 1/2 cup butter, softened
- 1 cup eggnog
- 1 container (8 ounces) sour cream
- 1 teaspoon rum extract
- 2 eggs
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Eggnog Glaze:
- 1/2 cup powdered sugar
- 1 to 2 tablespoons eggnog
Roast Chicken, Simple

TIP: Very cold chicken won't roast evenly
- 1 small onion, peeled and quartered
- 3 cloves garlic, peeled and quartered
- 3 sprigs fresh tarragon
- 3 sprigs fresh thyme
- 1 (5 lb.) chicken, giblets removed
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground pepper
Pork Ribs in Mango Sauce

Pork ribs are a wonderfully messy delight
- lbs. pork ribs seasoned with:
- 4 teaspoons of adobo or salt
- Mashed garlic
- 2 tablespoons olive oil
- 1 tablespoon vinegar
- For the mango sauce:
- 1 cup mango pulp
- 1/4 cup soy sauce
- 1/2 tablespoon grated ginger
- 1 teaspoon mashed garlic
Pork Tenderloin with Apples and Bacon (Slow Cooker)

Cook bacon until crisp; remove and drain on paper towels, reserving 1 tablespoon drippings in skillet
- 4 slices of bacon
- 2 (3/4 lb.) pork tenderloins
- 2 medium-sized sweet onions, sliced
- 2 Braeburn apples, cored and cut into eighths
- 1 tablespoon dark brown sugar
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons apple jelly (optional)
- 1/2 cup chicken broth
- 1/4 cup apple cider vinegar
Fried Apples

Clean, core and slice apples
- 2 cups plus 1/2 cup apple juice
- 5 - 6 golden delicious apples, cleaned, cored and cut into slices about 1/4 inch thick
- 3 tablespoons cornstarch
- 1 teaspoon apple pie spice (see below)
- 4 tablespoons brown sugar
Garlic Baked Shrimp

Preheat oven to 425 degrees
- 1 lb. fresh, raw shrimp, deveined, peeled and tails removed
- 2 tablespoons butter, melted
- Juice from half a lemon
- 2 tablespoons parsley, finely chopped
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon paprika
- 1/2 teaspoon lemon zest
- 4 cloves garlic, minced
- 1 cup corn flakes cereal, crushed or Panko breadcrumbs
- Salt and pepper to taste
Shrimp Creole

Saute onion and next 3 ingredients in hot oil in a large skillet over medium-high heat 5 minutes or until tender
- 2 lbs. medium-sized fresh or frozen shrimp
- 2 cups chopped onion
- 1 cup chopped green bell pepper
- 1 cup chopped celery
- 2 garlic cloves, minced
- 1/4 cup vegetable oil
- 1 (6-oz.) can tomato paste
- 1 1/2 cups chicken broth, divided
- 1 (14.5-oz.) can diced tomatoes, undrained
- 1 (8-oz.) can tomato sauce
- 2 bay leaves
- 1 teaspoon sugar
- 1 teaspoon ground red pepper or 1/4 teaspoon hot sauce
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 2 tablespoons flour or cornstarch
- Hot cooked rice
Beef Stir Fry

Mix together marinade ingredients and pour on meet in a plastic bag
- Marinade:
- 2 tablespoons oil
- 2 teaspoon soy sauce
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
- Sauce:
- 1 teaspoon hoisin sauce
- 4 3/4 tablespoon soy sauce
- 3 tablespoons sugar
- 1 cup chicken broth
- 4 teaspoons cornstarch
- Stir Fry:
- 1 pound sirloin steak, sliced in strips
- 1 bag of fresh mixed vegetables
- 14 ounce can chicken broth
- 1 onion, sliced
- 4 cloves garlic minced
