Chicken Parmesan Casserole

Directions Fill a large pot with lightly salted water and bring to a rolling boil over high heat
- 1 (16 ounce) package uncooked rotini pasta
- 1 pound skinless, boneless chicken breasts, cut into bite-size pieces
- 2 cups vegetable oil for frying
- 2 cups flour
- 4 eggs, beaten
- 2 cups Italian seasoned bread crumbs
- 2 tablespoons garlic powder
- 1 (16 ounce) package shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 1 1/2 (32 ounce) jars marinara sauce
- 1/2 cup dry red wine (such as Sangiovese)
- 1/2 cup grated Parmesan cheese
Super-Moist Carrot Cake

Preheat oven to 350 degrees F
- Cake:
- 1 cup sugar
- 3/4 cup light brown sugar
- 1/4 cup butter, melted (1/2 stick)
- 1 cup vegetable oil
- 3 eggs
- 1 1/2 teaspoons vanilla
- 2 1/2 cups flour
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1/4 teaspoon nutmeg
- 1 cup golden raisins
- 3/4 cups chopped pecans
- 1 pound shredded carrots
- 3/4 cup crushed pineapple, well drained

- 3 cups powdered sugar
- Optional decoration: 15 pecan halves
Frosted Banana Bars

Banana bars: In mixing bowl, cream butter and sugar
- Bars:
- 1/2 cup butter, softened
- 1 1/2 cups sugar
- 2 eggs
- 1 cup (8 oz.) sour cream
- 1 teaspoon vanilla extract
- 2 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 medium ripe bananas, mashed (about 1 cup)
- Frosting:
- 1 (8 oz.) package cream cheese, softened
- 1/2 cup butter, softened
- 2 teaspoons vanilla
- 3 3/4 to 4 cups confectioners' sugar
Orange Pound Cake

Heat the oven to 350 degrees
- Glaze:
- 2 sticks unsalted butter
- 2 1/2 cups granulated sugar, divided
- 4 extra-large eggs, at room temperature
- 1/3 cup grated orange zest
- 3 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon kosher salt
- 3/4 cup freshly squeezed orange juice
- 3/4 cup buttermilk, at room temperature
- 1 teaspoon pure vanilla extract
- 1 cup confectioners' sugar, sifted
- 1 1/2 tablespoons freshly squeezed orange juice
Pizza Casserole, 3 Meats

1. Cook pasta to al dente
- 1 lb. bow tie pasta
- 1 lb. ground beef
- 1 large onion, chopped
- 2 (26 oz.) jars spaghetti sauce
- 1 lb. cubed cooked ham
- 1/2 -1 lb sliced pepperoni
- 3 (8 oz) bags shredded mozzarella
- 6 tablespoons graded parmesan
- 2 tablespoons chopped garlic
- 1 teaspoon dried oregano
Chicken Marsala

Preheat two saute pans over medium high heat
- 6 boneless (skinless chicken thighs that are pounded thin)
- 1 pound mushrooms (cremini or white - sliced thinly)
- 2 shallots (sliced thinly)
- 5 tablespoons olive oil
- 1 cup marsala wine
- 3 tablespoons butter (cubed)
- 1/3 cup parsley (chopped for garnish)
- salt and pepper to taste
- flour (for breading)
- 1 cup water (optional)
Honey Lime Rainbow Fruit Salad

Add all fruit to a large mixing bowl
- 1 lb. fresh strawberries, sliced
- 1 lb. fresh pineapple, diced
- 12 oz. fresh blueberries
- 12 oz. red grapes, halved
- 4 kiwis, peeled and diced
- 1 (15 oz.) can mandarin oranges in juice, drained well and halved
- 2 bananas, sliced
- 1/4 cup honey
- 2 teaspoons lime zest (2 medium limes)
- 1 tablespoon fresh lime juice
Banana Pudding (Meringue)

- 1 3/4 cups sugar
- 3/4 cup flour
- 2 3/4 cups milk
- 4 egg yolks
- 2 tablespoons vanilla
- 1 (11-ounce) box vanilla wafers
- 3 ripe bananas, cut into 1/4-inch slices (3 cups)
- 4 egg whites
- 1/4 up sugar
- 1/8 teaspoon vanilla
Ribs BBQ (Slow Cooker)

Cut ribs apart, if necessary, and trim excess fat; sprinkle 1 teaspoon salt evenly over ribs
- 4 lbs. bone-in country-style pork ribs
- 2 teaspoons salt, divided
- 1 medium-sized onion, chopped
- 1 cup packed light brown sugar
- 1 cup apple butter
- 1 cup ketchup
- 1/2 cup lemon juice
- 1/2 cup orange juice
- 1 tablespoon steak sauce
- 1 teaspoon coarse ground pepper
- 1 teaspoon minced garlic
- 1/2 teaspoon Worcestershire sauce
