Pineapple Cocktail

- 1 1/2 ounces pineapple juice
- 1-ounce vodka
- 1-ounce orange liqueur, recommended: Cointreau
- 1/2-ounce freshly squeezed lime juice
- Turbinado sugar, for the rim (optional)
- Fresh wedges of pineapple
- Maraschino cherry
Green Chili Rice Casserole

1. In a bowl, combine all ingredients
- 2 • 2 cups cooked rice
- 1 • 1 (4 ounce) can chopped green chilies
- 1/4 • 1/4 teaspoon salt
- 6 • 6 ounces Monterey Jack cheese, cut into 1/2-inch cubes
- 1 • 1 cup sour cream
Smoked Fish Dip

1. Place whitefish, mayonnaise, and sour cream in the bowl of a food processor
- 2 cups flaked smoked whitefish
- 2 tablespoons fat-free mayonnaise
- 4 tablespoons fat-free sour cream
- 1 pinch Old Bay ™ Seasoning
- 4 drops hot pepper sauce, or to taste
- 3 drops Worcestershire sauce, or to taste
- 3 drops liquid smoke flavoring (optional)
- cracked black pepper to taste
Sausage-spinach Quiche

• Prepare pastry and set aside
- 1 • 1- Pastry pie shell...............or make your own........ I like the refrigerated ones when I ’m in a hurry...........
- 8 • 8 -ounces bulk pork sausage :.... I use the hot sausage !! I like the spice
- 1/4 • 1/4 -cup chopped onion
- 1 • 1 -clove garlic, minced
- • 1 -10-ounce package frozen chopped spinach (broccoli)
- 1 • 1- to 1 1/2 -cup shredded Cheddar cheese (4 ounces) ........ I use 1/2 cheddar and 1/2 pepper jack cheese........ or Gruyere
- 4 • 4- eggs, slightly beaten
- 1 • 1- cup light cream
- 1/4 • 1/4- teaspoon salt
Chicken Alfredo Pot Pie

Heat oven to 400 degrees. Coat 11 x 7 inch glass or ceramic baking dish with cooking spray
- 2 tablespoons butter
- 1 pound leeks, white and light green parts only, halved lengthwise, thinly sliced (2 cups)
- 1 cup chopped celery
- 2 teaspoons minced garlic
- 3 1/2 cups shredded rotisserie chicken
- 2 (14 ounce) cans quartered artichoke hearts, drained
- 1 (15 ounce) jar Alfredo sauce
- 1/2 cup julienned sun-dried tomatoes packed in oil, drained
- 2 tablespoons chopped fresh tarragon
- 1/4 teaspoon pepper
- dough for 1 (9 inch) pie crust
Barbeque Sauce

Simmer Dump all this stuff into pan on stove now approaching a simmer if you have been quick
- Mix in a large bowl:
- Wet Stuff
- 3 -24 ounce bottles of Ketchup, use the plastic ones, we will refill after making sauce.
- 24 ounces Grapette
- 1 pint to 1 quart vinegar. Doesn’t matter how much.
- Put in large pan and heat on “high”
- Dry Stuff
- 1 – 4 ounce can of chili powder
- 1 – 4 ounce can of black pepper
- 1 – 4 ounce can of garlic salt (salt not Powder)
- ½ cup sugar
- 1 small tabasco
- 1 small mustard
- Stir
Grilled Salmon

1.Season salmon fillets with lemon pepper, garlic powder, and salt
- 1 1/2 pounds salmon fillets
- lemon pepper to taste
- garlic powder to taste
- salt to taste
- 1/3 cup soy sauce
- 1/3 cup brown sugar
- 1/3 cup water
- 1/4 cup vegetable oil
REUBEN APPETIZER

- 32 oz. fresh sauerkraut 1 lb. corned beef, chopped 8 oz. grated Swiss cheese 1 1 cups low-fat mayonnaise 2 Tbsp. Dijon mustard 1 cup green onions, sliced Triscuits or party rye
Bananas Foster

Combine the butter sugar and cinnamon in a flambé pan or skillet
- 1/4 ¼ cup butter
- 1-cup brown sugar
- 1/2 ½ teaspoon cinnamon
- 1/4 ¼ cup banana liqueur
- 4 bananas, cut in half lengthwise, then halved
- 1/4 ¼ cup dark rum
- 4 scoops vanilla ice cream
