Jalapeno Cheese Poppers

1. Preheat oven to 375º. Line a large baking sheet with parchment paper
- 1 c. finely shredded Parmesan
- 1/2 c. shredded cheddar (preferably aged)
- 1 jalapeño, sliced thinly
- 4 slices bacon, cooked and crumbled
- Freshly ground black pepper
Spiced Tea

3 teaspoons of mixture to a cup of hot water
- 11/3-cup tang (use Crystal lite 2 packs)
- 1 package powder lemonade
- 1 1/2 1 ½ cup instant tea
- 2 1/2 cup sugar
- 3 teaspoons cinnamon
- 2 teaspoons ground cloves
- Mix well
Broccoli and Rice Casserole

Cook rice and mix with Cheese Whiz
- 1 cup rice
- 4 oz cheese whiz
- 1/2 stick butter
- 1/2 cup onions
- 1 package frozen broccoli, chopped
- 1 can cream of mushroom soup
Chicken and dumpling casserole

The secret of this is not to stir anything
- 2 chicken breasts, cooked and shredded (I use a store bought rotisserie chicken)
- 2 cups chicken broth
- 1/2 stick of butter
- 2 cups Bisquick
- 2 cups whole milk
- 1 can cream of chicken soup (the herbed cream of chicken soup if you can find it)
- 3 teaspoons of chicken granules (I use Wylers)
- 1/2 teaspoon dried sage
- 1 teaspoon black pepper
- 1/2 teaspoon of salt or more to taste
Chicken Florentine Artichoke Bake

1. Preheat oven to 350 degrees F
- 8 ounces dried bow tie pasta
- 1 small onion, chopped
- 1 tablespoon butter
- 2 eggs
- 1 1/4 cups milk
- 1 teaspoon dried Italian seasoning
- 1/4- 1/2 teaspoon crushed red pepper (optional)
- 2 cups chopped cooked chicken
- 2 cups shredded Monterey Jack cheese (8 oz.)
- 1 14 ounce can artichoke hearts, drained and quartered
- 1 10 ounce frozen chopped spinach, thawed and well drained
- 1/2 cup oil-packed dried tomatoes, drained and chopped
- 1/4 cup grated Parmesan cheese
- 1/2 cup soft bread crumbs
- 1/2 teaspoon paprika
- 1 tablespoon butter, melted

- 1 eggplant, cubes 1 inch
- 1 cup celery
- 1/2 cup onion
- 1/4 cup vinegar
- 1 tablespoon sugar
- 1/4 teaspoon oregano
- 1/2 cup capers
- 3/4 cup whole stuffed olives
- Salt
- Pepper
- Small can tomato sauce
- 1/2 cup grated american cheese
Smoked Onion Dip

Soak the hickory chips in water for 30 minutes, and then drain
- 5 medium onions, or 4 cups smoked onions (1 onion)
- 4 cups mayonnaise (1 cup mayonnaise)
- 2 cups sour cream (1/2 cup sour cream)
- 1 cup milk (1/4 cup milk)
- 3 tablespoons Worcestershire sauce (1 tablespoon Worcestershire sauce)
- 2 tablespoons black pepper (1 tablespoon black pepper)
- 1 tablespoon sugar (1 teaspoon sugar)
- 1 tablespoon salt, plus more for seasoning (1 teaspoon salt)
- 1/2 teaspoon liquid smoke (dash liquid smoke)
Hushpuppies

Using a deep pot, preheat oil for frying to 350 degrees F
- 1 1/2 cups self-rising cornmeal
- 1/2 cup self-rising flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 small onion, chopped
- 1 cup buttermilk
- 1 egg, lightly beaten
- Whole kernel corn
- Cheddar cheese
- jalapeno chopped
Alton Brown’s Shrimp Cocktail

Using scissors devein the shrimp leaving the peeling on
- 2 pounds good shrimp
- Brine
- 1/4 ¼ cup kosher salt
- 1/4 ¼ cup sugar
- 1 cup water
- 2 cups crushed ice
Gruyere Potato Gratin

Preheat oven to 400 degrees and butter a 3 quart gratin or shallow baking dish
- 2 pounds yukon gold potatoes
- 1 1/2 cups coarsely grated Gruyere cheese
- 1 cup milk, heated just to boiling
- 1 cup heavy cream, heated just to boiling
- Freshly grated nutmeg
- Salt and pepper to taste
