Chicken & Garlic with Fresh Herbs Recipe

• 1. Sprinkle chicken with salt and pepper
- 6 boneless skinless chicken thighs (about 1-1/2 pounds)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- 10 garlic cloves, peeled and halved
- 2 tablespoons brandy or chicken stock
- 1 cup chicken stock
- 1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
- 1/2 teaspoon minced fresh thyme or 1/8 teaspoon dried thyme
- 1 tablespoon minced fresh chives
Chipotle-Lime Tartar Sauce

Combine all ingredients. Chill and serve as a topping for shrimp
- 1 cup mayonnaise
- 1/3 cup chpped cornichons
- 3 tablespoons chipotle pepper sauce
- 2 tablespoons chopped capers
- 2 tablespoons chopped cilantro
- 2 tablespoons lime juice
White Clam Sauce

1. Bring a large pot of lightly salted water to boil over high heat
- 1 pound rigatoni
- 1 bunch asparagus, ends snapped off and cut into 1-inch pieces
- 1/4 cup olive oil
- 6 cloves garlic, finely chopped
- 3 cans (6-1/2 ounces each) clams, drained and 1/2 cup clam juice reserved
- 2 tablespoons lemon juice
- 4 jarred hot cherry peppers, seeded and thinly sliced
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter
- 1 cup Italian parsley, chopped

Chicken Korma

1. Soak cashews in 1/4 cup boiling water for 15 minutes
- 1/4 cup cashews
- 2 tablespoons vegetable oil
- 1 large onion, sliced
- 1 tablespoon fresh ginger, chopped
- 2 cloves garlic, chopped
- 2 teaspoons curry powder
- 1 teaspoon turmeric
- 1 1/4 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/2 cup chicken broth
- 1/4 cup tomato sauce
- 3/4 teaspoon salt
- 1/2 cup plain Greek yogurt
- 1 tablespoon cornstarch
- 3 cups cooked basmati rice
Senate Bean Soup

Wash the navy beans and run hot water through them until they are slightly whitened
- 2 pounds dried navy beans
- four quarts hot water
- 1 1/2 pounds smoked ham hocks
- 1 onion, chopped
- 2 tablespoons butter
- salt and pepper to taste
Flank Steak Pinwheels

1. Preheat grill to high. 2
- 2/3 • 2/3 cup artichoke hearts chopped
- 1 • 1 pound(s) flank steak, trimmed of fat
- 1 • 1 clove(s) garlic, minced
- 3 • 3 tablespoon(s) light herbed cheese spread, such as Boursin
- 1 • 1 cup(s) baby spinach
- 3/4 • 3/4 teaspoon(s) kosher salt
- 1/2 • 1/2 teaspoon(s) freshly ground pepper
Chili

Reduce heat to a very slow simmer for 30 minutes
- Brown meat on medium heat in 4 quart pot, 15 minutes, then add:
- 6 pounds beef, ½ inch cubes with all fat removed
- 6 cups beef broth
- 6 cups chicken broth
- 6 medium onions, diced
- 9 tablespoons Red chili pepper, pure ground chili pepper
- 2 teaspoon cayenne pepper
- 2 tablespoon salt
- 3 - 15 ounce cans of tomato sauce or diced tomatoes
- Boil rapidly for 45 minutes, or until the meat is almost tender, with id on the pot.
- Then add:
- 9 Tablespoons chili powder
- 4 1/2 4 ½ tablespoon cumin
- 6 teaspoons minced garlic
- 3 teaspoons pepper
Green Chili Pork

In a stewing pot, sauté vegetables until tender
- 2 cups diced yellow onions
- 1 cup diced poblanos
- 2 pounds diced pork
- 2 tablespoons minced garlic
- 2 tablespoons cumin powder
- 2 tablespoons ground coriander
- 2 tablespoons jalapeno powder
- 5 tablespoons green chili powder
- 2 tablespoons onion powder
- 2 cups chicken stock
- Salt and pepper to taste
Bucatini all'Amatriciana

1. In a large skillet over medium heat, warm up the olive oil
- 2 Tbsp. extra-virgin olive oil
- 4 oz. thinly sliced guanciale, pancetta, or chopped unsmoked bacon
- 1/2 tsp. crushed red pepper flakes
- 1/2 tsp. freshly ground black pepper
- 3/4 cup minced onion
- 2 cloves garlic, minced
- 1 28-oz. can peeled tomatoes with juices, crushed by hand
- Kosher salt
- 12 oz. dried bucatini or spaghetti
- 1/4 cup finely grated Pecorino (about 1 oz.)
- 1 Tbsp chopped fresh basil
