Gruyère, Ham and Spinach Frittata

Preheat the broiler. In a 10-inch nonstick ovenproof skillet, melt the butter
- 1 tablespoon unsalted butter
- 1/4 pound smoked ham in one piece, cut into 1/4-inch dice
- 4 cups baby spinach (3 1/2 ounces), coarsely chopped
- 8 large eggs
- 1 1/2 cups shredded Gruyère cheese (3 1/2 ounces)
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground pepper
Peppery Pasta Carbonara with Poached Egg

Cook bacon in a 10 inch nonstick skillet over medium heat until crisp
- 6 bacon slices, cut into 1 inch pieces
- 1/2 ½ pound spaghetti
- 1 Tablespoon unsalted butter
- 2/3 cup grated Parmigiano cheese
- 1/3 teaspoon pepper
- 2 Tablespoons tarragon
- 2 large eggs
Double Cheese Stuffed Burgers

1. Heat grill. Form beef into 12 (4-inch) patties 1/4 inch thick
- 2 lb. ground beef (85% lean)
- 1 (5.2-oz.) pkg. garlic and herb spreadable cheese
- 1 cup shredded sharp cheddar cheese, preferably white cheddar
- 2 tablespoons chopped fresh parsley
- 1/8 teaspoon salt
- 1 large sweet onion, sliced (1/4 inch)
- 2 tablespoons olive oil
- 6 Kaiser rolls, split
- 1/2 cup mayonnaise
- 6 green leaf lettuce leaves
Squash Casserole

Preheat oven to 350 degrees F
- 6 • 6 cups large diced yellow squash and zucchini
- • Vegetable oil
- 1 • 1 large onion, chopped
- 4 • 4 tablespoons butter
- 1/2 • 1/2 cup sour cream
- 1 • 1 teaspoon House seasoning, recipe follows
- 1 • 1 cup grated cheddar cheese
- 1 • 1 cup crushed butter crackers (recommended: Ritz)
BREAKFAST SAUSAGE

Cut up the pork into 1- to 2-inch pieces, and place in a large tray or bowl
- 5 lb. pork butt
- 2 Tbsp. salt
- 1 1/2 Tbsp. ground white pepper
- 1 Tbsp. rubbed sage
- 1/2 tsp. ginger powder
- 1/2 Tbsp. nutmeg
- 1/2 Tbsp. dried thyme
- 1/2 Tbsp. hot red pepper (optional)
Maple Chili Glazed Lamb Chops

Heat oven to 350 degrees. Season lamb chops with 2 teaspoons salt and pepper to taste
- 8 loin lamb chops, 2 inches thick
- 2 teaspoons salt
- Freshly ground pepper
- 1/4 ¼ cup maple syrup
- 1 Tablespoon prepared Asian chili paste
House Seasoning:

Mix ingredients together and store in an airtight container for up to 6 months

- 1/4 • 1/4 cup black pepper
- 1/4 • 1/4 cup garlic powder
Steamed Broccoli With Lemon Zest

Discard the lower third of the broccoli stem (compost!)
- 1 pound broccoli
- 1 teaspoon extra virgin olive oil
- Zest from 1 lemon
- Juice from 1/2 a lemon (zest first, juice second)
- Salt
- Pinch red pepper flakes, (optional)
Ginger dipping sauce

In a medium bowl, whisk together the soy sauce, mirin, sesame oil, lime juice, and honey
- 1/2 ½ cup soy sauce
- 1/4 ¼ cup Mirin
- 2 Tablespoons Asian Sesame Oil
- Juice of one lime
- 1 to 2 tablespoon honey
- 2 tablespoons fresh minced Ginger
- 2 cloves fresh minced garlic
- Thai Chile finely diced
Mom's Broccoli and Cauliflower Salad

Mix dressing together and add to vegetables
- 1 bunch broccoli, broken up
- 1 head cauliflower, broken up
- 1 small onion, chopped
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon vinegar
- 1 tablespoon sugar
- Dash tobasco
- Dash Worcestershire sauce
- salt and pepper to taste
