Makes 4 Inspired by the Wafels & Dinges food truck, this ice cream sandwich is made with 2 delicious waffles
- Ingredients:
- 2 cups all-purpose baking mix
- 1 Tbsp sugar
- 1 cup milk
- 1-1/2 tsp vanilla extract
- 1 pint strawberry ice cream, divided
- 2 cups semi-sweet chocolate
- 1/4 cup, plus 1 Tbsp, coconut oil, divided
- 3/4 cup white chocolate
Pancetta crusted tilapia with sage mashed sweet potato

Boil sweet potatos until tender - set aside
- 2 medium sized tilapia filets
- 1/2 cup 2 percent milk
- 1/2 cup Pancetta - sliced into small pieces
- 1 egg (beaten)
- 1 cup Panko bread crumbs
- 2 tps sage (finely chopped)
- 3 tps Sweet pimenton (smoked spanish paprika)
- 1/3 cup olive oil
- 2 large sweet potatos, peeled and cubed
- kosher salt to taste
- fresh ground black pepper to taste
- 1/2 cup chicken broth
- 1 tsp dry thyme

- 4 cups chopped fresh broccoli (about 1-1/2 pounds)

- 2 eggs
- 1/4 cup vegetable oil
- 1 cup semi-sweet chocolate chips
Easy Weeknight Bacon Mac n' Cheese

- 1 Heat oven to 400°F. Spray 2-quart casserole with cooking spray. Cook and drain pasta as directed on package.
- 2 Meanwhile, in 3-quart saucepan, heat cooking sauce, milk and garlic to boiling. Remove from heat; stir in cheeses until melted. Stir in pasta, bacon and bell pepper. Spoon into casserole.
- 3 Bake uncovered 20 minutes or until edges are bubbly. Sprinkle with bread crumbs.
